Quinoa
DH and I love quinoa, but I'm running out of ways to prepare it. I do a spicy tomato quinoa, the quinoa caprese bake....for some reason always something with tomatoes!
Anyone have any other quinoa preparations they can share? Need new ideas

Quinoa
I like to do a cold salad with it.I usually add cucumbers, peppers, shredded carrots,feta and sometimes tomatoes. I dress it with lemon juice and olive oil and some herbs. Makes a great lunch.

I love it for breakfast instead of cereal, which is so high in sugar. I usually make a batch of quinoa on Sunday night and then have about a cup or so with milk, a drizzle of honey, a couple tbs of sliced or slivered almonds, and some type of cut up fruit - a banana, blueberries, or strawberries all work well. It's a very satisfying breakfast!

I made quinoa burgers once. I honestly thought they were disgusting, but it seems like they are at least somewhat popular.
I don't love quinoa though. I just like it, so that may be why.

I make it by adding cookied spinach until it's just wilted, white kidney beans, and a lemon vinaigrette, almost like a salad. It's delicious warm or cold!

Might sound a little strange but I love this one. Quinoa with chickpeas and cranberries:
Ingredients
1 cup bulgur wheat or quinoa 1 can of chickpeas, drained and rinsed 1/2 cup dried cranberries zest and juice from one lime 2 tbsp extra virgin olive oil 1 tsp cumin 1 tbsp honey (or agave nectar) 2 cloves garlic, crushed
Preparation
Prepare bulgur wheat or quinoa and set aside to cool.
Put chickpeas and cranberries in a bowl and toss with all the dressing ingredients.
Drain bulgur wheat or quinoa well and mix into salad.
To add some color and crunch, chop some snow peas and toss them in.

I eat it cold with tomato, avocado, squeeze of a half lemon and a little salt. I can eat this everyday!

skinnytaste has a good quinoa Mediterranean salad recipe I really enjoy.
I also substitute quinoa for rice in stuffed peppers and they always come out great.

Lastnight, I just made a bunch of quinoa, and then sautéed some broccoli with olive oil - you can roast it too to get same effect and mixed it in. It was really yummy.
