Has anyone ever made vegetarian corned beef?

I looked up a few recipes but I don't want to bother making it if it's going to be gross. I really dislike corned beef but my DH likes it but he doesn't eat meat anymore.
I'm going away for business on Tuesday so I was thinking about trying to make it in the crockpot.

I've been vegetarian for most of my life at this point and it never even occurred to me to try my hand at veg corned beef...I looked up some recipes and TBH it doesn't sound like it would be too good.

What about a vegetarian shepherd's pie instead? Sautée some vegetables, add a bit of vegetable stock and soy crumbles...a little cornstarch to thicken the broth up and top with mashed potatoes. I make that sometimes - just did it last week - and it always tastes great!

I don't even know what to say. Except that's a big stretch to call it any kind of corned beef

I never understood vegetarian meat substitutes. I feel like if someone is a vegetarian they dont like eating meat for various reasons. Just make some potatoes and another cabbage dish.

I dont get tofu pups, soy chicken nuggets and tofurkey and any of those products. Why would you want to simulate taste, shape and texture of meat when you dont eat it ?!

Lol, I'm new at this meatless thing. I still eat some meat but my DH doesn't and I'm always trying to find stuff to cook now.
