PERFECT eye round roast because of this.....
A Perfect Eye Round Roast
I was shocked at how simple this sounded and was hesitant until I read all the reviews and cooked one today following the recommendation.
I did also brine it overnight this I'm sure helped with the tenderness but it came out perfectly medium/medium rare. It was absolutely delicious. I pat it dried after the brine slapped olive oil around it and season. I let it stand room temp about an hour before placing it in oven. It was a little over 3 pounds so it went in 17 minutes at 500 (shut oven off) and stayed in oven for exactly 2 hours (do not open door at all during this time).

I only followed the how to cook info no recipe. I did buy Mckormick pot roast seasoning packet but did not use the bag it came with. I actually cooked it on the middle oven rack and left a pan under it for the drippings. It was an easy clean up and it cooked the roast evenly this way.
I just never thought to cook it like this. 5 minutes per pound @ 500 then left in stove for exactly 2 hours. I made this Sunday and we had leftovers tonight and it still tastes soooo good. I'm always overlooking this kind of meat and now doing it this way it's a no fail.

Can I ask a stupid question - does your oven stay hot for the 2 hours after you shut it off??
I tried to make roast like this one time - cooked it at 500 like it said for how long and then shut my oven off for the duration without opening the door and it felt cold not even an hour later, like I never even cooked anything cold.
Is that correct? I panicked and turned my oven back on and cooked it on low until I reached the internal temperature I wanted.
