I always make a breakfast casserole. It's easy, you can even put it together the night before and then just pop it in the oven. I have made a bunch over the years, I think my most recent one has tater tots in it, but I have done hash browns in it as well. I usually find a recipe online and then tweak it to add more stuff.
I'll see if i can find my recipes I need to dig them up for myself this year too so...

So I think this is the one I made last year:
Tater Tot Sausage Breakfast Casserole
It was a huge hit.
I have also made a hash brown breakfast casserole if tater tots are not your thing.
I usually also serve mini muffins, fruit salad, almond croissants from trade joes (they come frozen) that are incredible, and of course mimosas.
I also make a blueberry croissant puff as a "dessert" Blueberry Croissant Puff

I love french toast casseroles you make the night before
Trader Joes makes amazing chocolate croissants (in the frozen section) that you cook that morning.

when i've hosted breakfast and/or brunch, i make roughly the same things already listed.
* breakfast casserole... they're always big hits * french toast or mini pancakes or french toast casserole * some kind of fresh fruit * a meat... bacon, sausage, or a ham * something with veggies/salad * a "dessert"... a cake or a tart
* coffee * tea * juice * cocktail
