EASY PREGGO DINNER IDEAS!!!
So since dinner is a kind of a sore point for me these days..why don't we start a thread of really easy dishes to cook for those who dread cooking at this point!!! Someone else will have to start though!!! (psss Hayley.. that's you)

Okay I'm starting with my ideas from the other thread!
1 Rotisserie Chicken ($4.99 at Costco!) - 3 meals!
Chicken with sauteed green beans and tomato/mozz/basil salad.
Salad with mixed greens, sliced green apple, halved seedless red grapes, candied walnuts, blue cheese (pasteurized of course!) cucumbers, tomato in a raspberry vinaigrette and we threw a few sliced of chopped chicken breast (removed the skin from the rotisserie chicken) on top.
Chicken with roasted potatoes, mushrooms, & red onion and some sliced cucumbers.

Mexican Rice Casserole

from her site: My friend would use a can of Mexican tomato sauce that was really spicy but it wouldn't be good for the four kids eating dinner so I opted to use regular tomato sauce. (If you aren't serving kids, I recommend the spicy tomato sauce for added flavor and kick). I also decided to throw in some black beans, cilantro and extra seasonings. It turned out really delicious - we all loved it (except for my daughter - picky kid). I topped it with sour cream but also served it with salsa and guacamole on the side. It was quick and easy to make and there was little clean up.
Mexican Rice Casserole:
1 1/2 cups of white rice, prepared per instructions 1 tsp of olive oil 1 lb lean ground beef (I used 96/4) 1/2 sweet yellow onion, diced 3 cloves of garlic, minced 1 tsp paprika 1 tsp chili powder 1 tsp dried cumin 1 tsp garlic powder 1 tsp dried oregano 1/2-1 tsp crushed red pepper flakes Sea salt and fresh cracked pepper, to taste 1 15 oz can of black beans, drained and rinsed (i'm leaving this out, I hate beans! haha) 1 15 oz can of tomato sauce 3-4 tbsp fresh cilantro, chopped (divided) 1-2 cups of shredded cheddar cheese 3-4 tomatoes, sliced thickly Sour cream (topping) Salsa (topping) Guacamole (topping)
Preheat the oven to 350 degrees. Prepare rice per instructions. While the rice is cooking heat the olive oil in a large skillet over medium heat. Once the skillet is hot, add the ground beef, making sure to break it up into crumbles. Cook the beef for 3-4 minutes then add the diced onion and all of the seasonings. Stir until well combined and cook for an additional 10 minutes or until the beef is cooked through and the onion is tender. Add the minced garlic and cook, stirring constantly for an additional 60 seconds. Add the cooked rice, drained and rinsed black beans, tomato sauce and a bit of cilantro (reserving some for garnishing) to the beef and onion mixture. Mix the ingredients thoroughly, taste and re-season if needed.
Coat a large baking dish with cooking spray and pour the rice mixture into the dish, spreading it evenly. Place the tomato slices on top of the rice mixture then top with cheddar cheese.
Spray a piece of tin foil with cooking spray (so the cheese won't stick) and cover the baking dish. Bake for 20 minutes then remove the tin foil. Bake for an additional 5-7 minutes or until the cheese is melted and golden brown. Remove from the oven and let sit for 5 minutes before slicing. Top with a dollop of sour cream and the remaining chopped cilantro. Enjoy.

I second the rot. ckn, makes life so much easier and I use the leftovers for ckn salad, which is lunch for a few days. Costco def. gives you the most meat on the chicken.
I love my steak marinade: flank steak 1 cup soy sauce (depending on size) 1/4 cup gravy master (depending on size) garlic powder onion powder S&P let it marinade (this is a good monday night meal b/c you can marinade on sunday and let sit over night) I usually serve with baked potato/sweet potato & a veggie

Breakfast for dinner:
blueberry, chocolate chip, banana, or whatever else pancakes
french toast with homemade whipped cream
fried egg, turkey bacon & cheese on toasted english muffins
muffins - blueberry, corn, coffee cake served with a nice pat of butter and some fresh fruit and/or some oatmeal
fluffy scrambled eggs with lox (cooked for a minute or 2 in the eggs) & shallots, chives, parsley with buttered toast

easy ckn dish
1 tbsp butter 1 lb chick. tenders 2 cloves garlic
1 1/2 cups instant brown rice 14.5 oz chick. broth 1 tbsp fresh lemon juice 2 tsp fresh lemon peel,grated
2 cups fresh baby spinach
1. In a large skillet, melt the butter over medium heat, then add the chick and garlic. cook until the chicken is golden brown, set aside on a plate and keep warm.
2. Add the rest of the ingredients except the spinach to the skillet and bring to a boil over high heat. Cover and reduce heat to low and cook until the juice is absorbed (usually about 10 min.)
3. Add the spinach to the skillet and mix. Serve on a plate topped with the chicken.

I use the WW Bobelli Pizza Seasoning-It's on my spice rack!! :) EVOO on the bebelli Mozzeralla cheese Sliced Zucchini.
Place in 450 over for 8-10 mins
YUMMY!!!! And no heartburn!!!!!

Tomorrow is chipotle chicken panini with monterey jack cheese & avocado - with salad
Thursday is sliders with pepper jack cheese and side of caesar salad (with my egg-less homemade dressing)

I'll go by what I made last week
paninni with burratta and proscuitto, salad (I just had a cheese paninni)
fajitas (grilled chicken, onions, red and green peppers..cooked with garlic, cumin powder, lime juice, ancho chili powder, salt and pepper) served with lettuce, tomatoes, black beans, and sliced avocados
grilled pork sausages with a side salad
grilled tri tip steak, again with a salad.
burgers with all the fixings and kettle chips (totally cheated there )
boneless pork ribs with a dry bbq rub. I had these seasoned for a while with a dry rub I keep on hand. I roasted them at 350 until they were fully cooked. I then sliced them up and made sandwiches...cheddar cheese, lettuce, and sauteed onions and mushrooms in my special bbq sauce (I spike it with Jack Daniels ) with cut up watermelon.
I made the pork on Sunday. I have some leftover meat that I am making into a spinach salad tonight with shredded cheddar, avocado, black beans, cukes, and tomatoes....maybe a simple lime or lemon dressing.
I usually will cut up watermelon or other fruit to go with dinner.
I just realized I've been making a lot of sandwiches, but whatever it's summer.

you don't even need a press!
at my apt, I fill up the tea kettle with water and wrap the bottom in aluminum foil and put it on top of the sandwich after I place it in the pan...a little pressure and voila! pannini~
I have a cast iron grill press that I bougt at williams sonoma...it's just a piece of iron with a handle on it and grill slats on the bottom..I use that to make panini with my cast iron griddle up at my house.

Ohh I second this..I made WW Bobelli last night with skim ricotta on the bottom, sauce and then the morning starts meatless sausage with skim mozz on top done in 20 minutes with prep!

I would have a quesadilla every night if I could....dinners are hard in our household as DH is hypoglycemic and can't have carbs, sugar....(he can certain things...brown rice, sweet potato)
SO pasta is always out or else I'd suggest that!!!!

Oh and Fridays we go out for dinner... so there's only 6 ideas for each week

the trick is that i use a big squirt of mayo instead of the raw egg - it gives it a nice creamy consistency.
i dont' have measurements... but it's basically just the mayo, lots of grated parm (fresh... not the green container please!), a little Worcestershire sauce, salt, pepper, extra virgin olive oil, lemon juice (fresh), and some red wine vinegar all whisked together!
