Christmas Breakfast Help
We are having company for breakfast on Christmas....10 adults and a few kids.
What should I make? I have 3 kids and want to enjoy christmas morning with them, KWIM.
I had the same people over for easter and made a spinach and onion frittata and french toast casserole, looking for a different idea. TIA

breakfast casseroles or souffles are always great! And maybe have a coffee cake as well and a fruit salad. You can make this stuff the night before. Bake the egg dishes in the morning.
Casserole 4 slices of bacon 8 scallions 1 tablespoon of butter 1 pound of sliced mushrooms 8 eggs 1 cup milk 1/8 teaspoon pepper (or to taste) 2 1/2 cups shredded cheddar cheese
In large skillet cook bacon till crisp drain off drippings and crumble.
Wipe pan clean. Cook scallions in butter over medium heat for 2 to 3 minutes. Add mushrooms and cook for 2 to 3 minutes more. Remove from heat.
In bowl beat together the eggs, milk and pepper. Stir in cheese and the mushroom mixture. Pour into a greased 2-quart 12"x7"x2" baking dish.
Bake at 350° for 35 to 40 minutes, or until puffed and knife inserted comes out clean. Let stand 5 to 10 minutes before cutting.

Sausage and egg souffle Day old bread (a loaf of white) 1 pound loose cooked sausage 10 eggs 3/4 cup milk salt and pepper to taste 1/2 teaspoon dry mustard 1 can cream of mushroom soup 1 cup grated cheese (sharp or any mixtures you like) 1/3 cup milk
Tear bread into pieces and cover the bottom of a 9 x 13-inch pan. Put sausage on top of bread. Blend together eggs, 3/4 cup milk, salt and pepper, and dry mustard; put over sausage and bread. Mix together soup, cheese, and 1/3 cup milk and pour over all. *can top with shredded cheese
Refrigerate overnight. Bake at 325 degrees until you are satisfied the casserole is done (50 to 60 minutes).
Blueberry Lemon coffee cake 6 Tblsp Butter, Softened 1 Cup of Sugar 2 Eggs ½ Cup Milk 1 Cup Fresh Blueberries, Washed (or thawed frozen) 1 ½ Cups All Purpose Flour 1 Tblsp Baking Powder ¼ Tsp Salt 1 ½ Tblsp Lemon Zest 1 Tsp Lemon Juice Preheat oven to 305 Degrees F. Grease & dust with flour a loaf or Bundt pan.
In a mixer fitted with a paddle, cream the butter and the sugar. Add the eggs, and mix.
Sift together the flour, baking powder & salt.
Add the dry ingredients, alternately with the milk, to the butter mixture. Mix completely. Then add in the blueberries, lemon & juice. Stir carefully, so as not to crush the berries.
Pour batter into prepared pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Serves 8-10.

my family's always done a similar spread. cinnamon rolls, date nut bread with cream cheese, honey balls, one breakfast casserole...some kind of a citrus salad. just a buffet of stuff that doesn't need much attention.

My sister makes this French Toast Casserole ever year for Christmas morning and we love it. She usually makes it a day or two in advance too.
Ingredients: 1 loaf French bread (13 to 16 ounce size) 8 large eggs 2 cups half-and-half 1 cup milk 2 tablespoons granulated sugar 1 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 dash salt Maple syrup ***Praline Topping* 1 cup butter 1 cup packed light brown sugar 1 cup chopped pecans 2 tablespoons light corn syrup 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg

Directions:
Slice French bread into 1-inch slices. Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping:
Combine all ingredients in a medium bowl and blend well.

Monkey Bread would be a big hit with the kids!
We do bagels, muffins, breakfast casserole, monkey bread and fruit on Christmas Morning.

In the past I have done a few different frittatas, but honestly, they are too much work now that I have kids. I want to enjoy christmas morning with them, not prepping for breakfast!
