Cooking rice

For some reason I am horrible at cooking rice even with a rice cooker. Good thing I don’t really like rice that much anyway.

So I just made dinner and I order from Hello Fresh quite often as the price and portion sizes work really well, etc.

Some of their meals come with rice and they have interesting instructions for jasmine rice in some meals:

Boil one liter of water and throw in the rice (it was 150g) and cook for ten minutes in the boiling water uncovered. Drain.

And the rice comes out perfect. I don’t know why. The rice isn’t parboiled or anything.

Most recipes have you boil, put rice in, simmer covered and then let sit off the heat for 10 minutes.

Does anyone use this method (boil for 10 mins and drain)?

Cooking rice

I wash my rice a few times, put it on the burner at a medium to high heat . Add salt and a bit of oil. Let it boil and once the water is reduced, I turn the heat to low, stir the rice around a little bit, and put the lid on. After a few minutes, maybe 5(?), I turn the heat off, move the pot without removing the lid to the back burner, and let it sit for a few more minutes. It works pretty well for me.

My mom makes the best rice (lol I know that’s a bias statement Chat Icon Chat Icon )

I try to use her method but never comes out as well.

Clean rice

Little Oil and water (water ratio is proportioned to how much rice you are making so 4 cups or five 4 cups of water)
Salt

Boil

Once boiled add rice

Leave uncovered till most water is absorbed then cover and lower heat to a simmer for about 20-30 minutes

I just buy the quarts of rice from Chinese restraints. Easier and don't have to deal with under or overcooked rice.

Always use that method. Another trick to is to add foil above the rice and close with a lid while simmering. Advise having dry crunchy rice. (I always use 1.5c of water to 1 cup of rice.)

No, I only boil water, add rice and boil for ten min more and then simmer. Yellow and white rice come out perfect.

Never drain in the middle. That’s interesting but seems like more work.

I make rice in my instant pot. I can't make it for the life of me on the stovetop.

2 cups brown rice. 1 cup coconut milk. 1 cup water. 20 mins and release.

I know it seems strange! It isn’t more work at all. It’s like doing pasta. It was finished in tens minutes and in that ten minutes I sautéed my chicken and veg teriyaki.

I’m going to have to try it with non Hello Fresh ingredients.

I wonder if that would work with a rice cooker? I don’t have an instant pot.

I actually heat oil, sauté the rice for a free minutes, add water, then reduce heat when it begins to boil.

I keep seeing recipes for Persian crunchy rice. What kind of crunchy rice is the one you mentioned? Any authentic recipes from you?

I meant raw by crunchy not the over cooked rice.

We call it Pegao, the bottom part of the rice. I hate it, everyone else in my family loves it.

Oh I’m slow, I read that wrong. I thought you cooked it after you drained it. Lol.

Re: Cooking rice

It is possible to mess up rice in a rice cooker. I’ve done it before but when I figured out the proper proportions for how much rice I was cooking to the amount of water, it could not be easier. Be sure to rinse out the rice. Looking for recipes online for specific races definitely helped me. Good luck!

Re: Cooking rice

i've been living under a rock.

didn't know there were so many different ways to cook white rice lol

2 cups white rice
wash a few times until water runs clear

2.5 cups water
dash salt
splash olive oil

high heat until water is about 50% evaporated.
cover and lower heat to lowest. cook for 15 about minutes.

fluff with fork.

It’s not a recipe, it’s just the overcooked rice from the bottom of the pot like Sash said. I love it! It has to be hot though -not cold, as soon as u finish cooking the rice. My mouth is watering now! Chat Icon

My sister bought me Kirkland pots last year and the rice didn’t stick and burn at the bottom. I was happy because I never had that happened before. My DH was so mad with that batch and I was never allowed to make it like that again.Chat Icon Chat Icon

Is he from DR? Love the different names we all have for the same foods, like what Dominicans/Puerto Ricans call tostones, we call them patacones. I think the only food that has kept the same name across all Latin countries is empanadas! Chat Icon
