Happy Birthday! Chat Icon

I'm a bit late, but I have a recipe for a pork roast I made with BBQ sauce. I liked this recipe a lot!

1 pork picnic roast (shoulder) with skin
Salt and pepper
1 cup apple cider vinegar mixed with
1 whole garlic - finely chopped.

Hand rub meat with the vinegar/garlic mixture. Cover bottom of baking pan with barbecue sauce, add meat and water to measure 1/2 inch in pan. Bake at 325°F, 2 1/2 to 3 hours. Turn and baste each hour.

Barbecue Sauce
1 small onion chopped
Juice of 1 lemon
2 T butter
1 small bottle catsup
1-2 T cider vinegar
3 T Worcestershire sauce
1 T brown sugar
1/2 t prepared mustard
1 garlic chopped

Over medium heat, mix all ingredients, stir, bring to boil- use as basting sauce and also table sauce. (I would double the recipe, next time.)

I served this sliced with warm tortillas, avocado, sour cream, chopped tomatos and onions, and a homemade chile pasilla hot sauce (I have the recipe, if you'd like). omg!

Grill up some london broil and shrimp/veggie kabobs with corn on the cob.

make a regular salad, & a pasta salad and one side like portabello mushroom stacks (broiled portabellos w/a slice of tomato & a slice of fresh mozzarella drizzled w/oil & balsamic)
