** Weekly Menu Thread, 10.21.12 ***

I thought I get this started

Sunday :

Breakfast:made skinny taste banana& nut pancakes - really good !

Dinner: Skinny taste mac and cheese with roasted broccoli. Dessert: Baked bananas with cinnamon and nutmeg and a side of frozen yogurt.

Monday: Vegetarian Chilli ( will take one the recipes from the other thread)

Tuesday : DH: broiled salmon with a BBQ sauce /brown sugar glaze , quinoa, roasted carrots with cinnamon and a little honey, sauteed mushrooms,. ME: Roasted chickpeas in a spinach salad with grated Parmesan.

Wednesday: Whole wheat burritos with brown rice, black beans, diced shirmp ( dh's) low fat sour cream seasoned with lime juice and cilantro.

Thursday: take out

Friday: out to eat

Saturday: cheese tortellini with sauteed zucchini and roasted Brussels sprouts.

Sunday: take out

Monday: refried bean tacos

Tuesday: english muffins pizzas topped with spinach, roasted brussel sprouts

Wednesday: lentil soup

Thursday: Trader Joe's falafel, pitas, hummus, salad

Friday: homemade pizza

Thursday: Thai Red Curry Shrimp, Snow Peas, and Rice

Friday: Tandoori Chicken, Spinach Sauteed in Garlic and Oil, and Basmati Rice

Saturday: Slow Cooker Beef Short Ribs in Homemade BBQ Sauce, and Braised Kale and Cabbage

Sunday: Kaddo Bourani (Afghani baked pumpkin dish with yogurt sauce)

Sunday: Chicken Francese over papardelle with escarole and white beans.

Monday: Short ribs in the crock pot with chipotle chilis, adobe sauce, and tart cherries with a side of polenta and burnt broccoli.

Tuesday: Turkey meatloaf with mashed cauliflower and sauteed broccolini.

Wednesday: Flank steak tacos with the fixins.

Thursday: ST stuffed chicken with spinach and ricotta, side of buttered peas.

Friday: Homemade pizza night.

DH and I used to eat this all the time at a restaurant called The Helmand when we lived in Baltimore. It's one of their signature appetizers (vegetarian), but we're going to eat it as a main meal tonight. It's essentially a really sweet sugar pumpkin covered in a garlic yogurt sauce. Think Afghani version of a sweet and sour dish.

Here are both vegetarian and meat versions of the recipe:

My Version of Kaddo Borwarni

I'm going to make some with and without meat tonight. It has an awful lot of sugar in it though which scares me! I'm going to cut back on the sugar and see what happens.

Ha- OP I had ST banana nut pancakes too! They were delish!

Sunday- ST Mushroom Stroganov (was kind of bland, IMO)

Monday- Lo fat Eggplant parm with a side salad

Tuesday- ST Peruvian Chicken with roasted pumpkin (had it last week and it was fantastic!)

Wednesday- ST Skillet Steak with Mushrooms and Onions and a side of steamed Broccoli

Thursday- DH is out, so I'll do baked salmon with a side of steamed broccoli

Friday- Out

Saturday- Pumpkin carving night! Homemade pumpkin ravioli (made tons last week!) in a sage and butter sauce. Maybe roasted chicken or maybe just a side salad.

I've come to the conclusion that my husband and kids just don't WANT to give up meat. So I make regular meals and then don't eat the meat portions. Works fine!

Sunday: Rotisserie Chicken (store bought), savory leek & mushroom bread pudding, baked mac & cheese, Roasted brussels sprouts

Monday: Man Pleasin' Chicken (Thank you Hayley!), Mashed Cauliflower, Caesar salad.

Tuesday: Spaghetti, Sauteed Zucchini, Red Sauce, Garlic Knots

Wednesday: Rosemary Dijon pork loin, Roast potatoes, gravy, Sugar Snap peas

Thursday: Catcher's Catch Can

Friday: Diner Night.. I play short order cook and they have choice of: Eggs any way, sausage, bacon, homemade hash browned potatoes, toast, juice (tomato, orange, cranberry), pancakes or frozen waffles.

Saturday: Halloween Party

Friday: Potluck with my friends

Saturday: Texas Roadhouse after a day at the wineries

Sunday: Just finished off a day of beer and appz with DH and my friends...we are way too full for dinner!

Monday: Quinoa & chickpea kale rolls with pineapple salsa

Tuesday: Chicken sausage & sweet potatoes

Wednesday: Portobello, broccoli, and red pepper melts

Thursday: Whole wheat rotini with shrimp in homemade sauce

This isn't mine.. Hayley (Maybeamommy) posted it somewhere else! But here's her words:

'If you haven't already tried "man-pleasing" chicken from Pinterest... get to it! It's woman and kid pleasing also :) all you do is mix 1/2 cup dijon mustard with 1/2 cup pure maple syrup. Pour that over chicken thighs (I prefer bone in skin on) seasoned with salt and pepper. Bake 40-60 minutes at 450. You can add fresh rosemary and 1 tbsp of rice vinegar as recipe calls for, but its just as good without'

She notes the skin gets crisp - which is always a plus. I'm trying it tonight!

Sunday - breakfast - apple fritter pancakes with powdered sugar, bacon; dinner - turkey cutlets and ST spinach & quinoa salad

Monday - ST flounder piccata, roasted potatoes w/onions, arugula salad

Tuesday - crispy gnocchi with pesto, sauteed spinach

Wednesday - takeout (we have the boys' birthday photo shoot at 6pm)

Thursday - grilled steaks (sirloin for me, ribeye for DH & the kids), grilled garlic bread, green salad

Friday - ST Texas cheese fries, roasted green beans

Saturday - Halloween party

Sat: We went out with friend to Mims (so delish)

Sun: BBQ burgers & dogs, baked beans, & french fries

Mon: ST asian-glazed-chicken-thighs with Tons of Veggies 'fried' brown rice (never made this last week)

Tues: Chicken nuggets and mac n cheese for the boys. (late office night for me, I'll probably have leftover chicken on a salad)

Wed: BBQ London Broil, Crash potatoes, burnt broccoli & salad (I may be out, not sure yet)

Thurs: Breakfast for dinner. Onion & pepper frattata, crispy bacon, mini pancakes & fruit salad

Fri: Pizza/leftovers for the boys (just remembered we have a Halloween party to go to)

Saturday: Made a stirfry (eggplant, red pepper, mushroom, tofu) in ginger/wasabi sauce.

Sunday: Went to a friend's house for the Giants game...pizza, beer and chips = not hungry for dinner.

Monday: Pasta with tomato-cream sauce from Eat Yourself Skinny

Tuesday: Baked potatoes with vegetarian chili, sour cream...salad on the side.

Wedneday: Not sure...have a late meeting. Maybe just canned soup and grilled cheese?

Thursday: Out with a friend.

Friday: Homemade falafal with salad?

Sat: out having Brazilian Rodizio for Luce's 3rd Birthday!

Sun: I made breakfast-not dinner, scrambled eggs with diced chorizo, black beans, warm toast.

Mon: grilled chicken over greek salad, pita with tzatziki

Tues: baked mac n cheese, sauteed zucchini

Wed: pork in garlicy broth over rice, sauteed greens

Thurs: lentil soup with chorizo, warmed baguette, salad
