That's good to hear! Its my first time making it. Do you think it would be okay to just make breasts this way, or does it have to be thighs? My DH won't eat dark meat. Maybe bone-in breasts would be okay?

I made it with drums, thighs and bone in/skin on breasts. All delicious. I did put the mustard in a mini prep with some fresh garlic before mixing it with the maple. I really like garlic. And I used Hayley's tip to do a 50/50 ratio on syrup and mustard. Other than that I pretty much followed the recipe!

I made this tonight...sort of...
I mixed 1/2 cup Dijon mustard and 1/2 cup real mple syrup. I poached the chicken in water, drained it and then cooked it with the sauce for about 15 minutes. I served it over leftover pasta. I added the rice wine vinegar but I really don't think it needed it. DS didn't like it, tasted too much like mustard which he doesn't like. I also used boneless chicken breasts. It was very tasty.
