***weekly menu 3/9***
Sat: Out for DH's birthday (yes again! Gotta love when your birthday falls in the middle of a week lol)
Sun: Meatloaf with red mash and steamed veggies
Mon: Baked Fish & Chips with cole slaw (I may change this....I don't like having potato 2 days in a row)
Tues: Grilled cheese with soup
Wed: ST Asian Chicken thighs with my own brown "fried" rice with tons of veggies
Thus: Leftovers
Fri: pizza/leftovers

Sat: Work late then out with friends Sun: Off...I want DH to take me out to brunch, which will probably fill me up for the rest of the day. Mon: Stuffed shells with ricotta and spinach, salad Tues: Lemon chicken over sweet pea risotto, roasted broccoli and tomatoes Weds: Leftovers Thurs: Oven baked tacos, spanish rice, black beans and corn Fri: Caramelized onion quiche, salad

Saturday: DD's Birthday Party!

Missed a few things last week, so there are some repeats.
Sunday- Indian eggplant curry with homemade Naan bread
Monday- ST Italian wedding soup
Tuesday- Pork stuffed cabbage in tomato sauce
Wednesday- Black bean burgers on homemade whole wheat buns with a side salad
Thursday- Garlicky Shrimp with avocado on homemade sourdough bread
Friday- Shrimp and tomato risotto
Saturday- out? AKA I have no idea

Are you doing the ST one? If so, let me know how it works out for you. I found mine to be kind of bland, but I'm not sure if I didn't season the squash enough. I'd like to hear what you did differently!

Thanks...I'm far from a gourmand LOL But I love to eat! Oven baked tacos are so easy, just fill the taco shells with meat/cheese/fixings (except the lettuce) and then arrange them upright in a baking dish. Bake at 350 for 10 minutes and the tacos come out softened and you can eat them with a fork and knife.

I was so off last week so I'll try to stick to my plan this week:
Sun.- Take out
Mon.-Pan Seared Honey Glazed Salmon with Browned Butter Lime Sauce, zucchini & potato of some sort
Tues.- Spiral ham, roasted sweet potatoes, roasted brussel sprouts
Wed.- Leftovers and potato & ham soup
Thurs.- Spaghetti squash for me, pasta with marinara sauce for everyone else, salad
Fri- out with friends

Sunday: Pork tenderloin, Sugar Snap Peas, oven roasted potatoes
Monday: Spaghetti with eggplant 'meat' balls (Polpette di Melanzane), Green salad with Basil Vinaigrette
Tuesday: Turkey and Veggie burgers on stone ground buns, zucchini chips.
Wednesday: Artichoke Chicken Bake, Noodles, Spinach Salad with warm bacon vinaigrette
Thursday: Porterhouse Steaks, Roasted Sweet Potatoes, Burnt Broccoli
Friday: Steamed Flounder with lemon, Sauteed Spinach, Brown Rice
Saturday: Out at party.. (They'll have corned beef, cabbage, rye bread, cole slaw, potatoes, etc..)

I am, but I am using homemade stock and more squash than she calls for (1.5 cups instead of 1).
I find a LOT of her recipes to be very bland, and I credit that to her trying to accommodate her toddler. I just add extra seasoning. I'm going to skip the sage and use nutmeg instead for flavor, I know that will help.

Sat - went out for Thai after a matinee that we saw.
Sun - nothing, had a heavy lunch
Mon - Boca 'chicken' patties on rye, side of sauteed green beans
Tue - grilled eggplant and zucchini & roasted potatoes with garlic, basil and tomatoes
Wed - out with a friend
Thu - lentil soup, salad with greens, goat cheese, walnuts and raspberry vinaigrette
Fri - Morningstar 'bacon' BLTs and fries

Sunday - Homemade pizza with leftover homemade marinara sauce
Monday - Turkey meatballs with leftover marinara, big salad
Tuesday: Sea scallops and cauliflower puree (Cooking Light recipe) with roasted grape tomatoes and garlic
Wednesday: ST Cheeseburger casserole; salad
Thursday: Goat cheese and apple chicken, homemade sweet potato "fries," steamed spinach
Friday: Mexican lasagna (vegetarian WW dish)
