Spinach
Anyone have any spinach recipes that they can share? DH doesn't like it cooked, only raw.

Spinach and Orzo Salad
There's also a great recipe on that site for spinach and strawberry salad but I haven't made it in years.

I love making salads with it.
A fave is making fresh bacon and throwing in red onion, blue cheese or feta and using a red wine vinegarette and walnuts and even craisins.
I make this a lot on a cold night with a creamy soup.

I made a similar salad on Easter. Spinach, strawberries, goat cheese, red onions, almonds, poppyseed vinaigrette.

I like it in a salad with mandarin oranges, glazed pecans, goat cheese, and a white balsamic vinaigrette. I also like it on a panini, where it is wilted, not cooked, like mozzarella, tomato, roasted red pepper...
