Weekly menu - 5/19

Ok, I'll start it Chat Icon

Sunday - went to a friend's house for brick oven pizza. I brought S'mores cookies

Monday - Pork skewers , wild rice, grilled asparagus with soy & balsamic

Tuesday - BLTs with avocado, mixed greens

Wednesday - marinated flank steak, grilled corn on the cob, whole wheat baguette

Thursday - crispy gnocchi with tomato sauce and fresh mozz, sauteed broccoli rabe

Friday and Saturday we are out

Sun - salad, roasted red pepper and tomato soup with mushrooms and green beans, foccaccia bread with olive oil and herbs from my garden :)

Mon - baked polenta rounds with cheese and heirloom tomatoes/mushrooms and green beans/salad

Tue - hopefully it's nicer out = grilled veggie burgers and foil packets of veggies (carrots, potatoes, mushrooms)

Wed - leftovers from Mon.

Thu - if it's nice out = BBQ'd tofu and veggie foil packets

Fri - not sure, might get out early so...margaritas?

Sat - beer garden with friends

Weekly menu - 5/19

Sunday we made home made pizzas

Monday: Grilled chicken salads.

Tuesday: Going to Mims in Roslyn for my cousins' graduation dinner.

Wednesday: Chicken parmesan on garlic bread heroes.

Thursday: Left overs from Wednesday.

Friday: Turkey burgers and baked french fries.

Saturday: Filet mignon, mashed potatoes and asparagus for DH's birthday!

Can you share your recipe for the foil packet veggies?



It's super easy!
Just think of a combo of veggies that you like.
I cut harder vegetables (like carrots, Brussels sprouts and potatoes) into smaller pieces, and leave things like peppers, mushrooms, snowpeas, etc. larger, this way they all cook up at about the same time.

Get a sheet of foil that's large enough to hold all of the veggies and still fold over (like a gift!) so nothing drips out.

Take the foil, put some olive oil on it (about a tablespoon), put half the veggies on top, a little more oil, then any spices you like. Then the rest of the veggies. Fold the foil around the vegetables and throw on the grill. Turn after about 7-8 minutes and check them about 3-4 minutes later. Once they're a little browned and you can stick a fork through them, they're done!

I've also taken peppers, sugar snap peas, snow peas and water chestnuts, used sesame oil, a little soy sauce and sesame seeds for a more Asian vibe.

Also works with pineapple! Pineapple and some hot/tangy BBQ sauce (don't use oil)...good lord is that delicious!

Sure, I usually make it with pesto and toasted pine nuts but I have tomato sauce in the freezer I need to use up. Instead of boiling, I just fry the gnocchi (I use the baby ones, but you can use the big ones too) in a little olive oil. Fry in a single layer and don't move them for like 3 minutes until they get a crust on the bottom, then you can mix them around and cook for 2-3 more minutes. Add sauce and cheese at the end and you're done. Super easy.

Sat - grilled stuffed peppers with brown rice, roasted cherry tomatoes & basil topped with fresh mozzarella cheese

Sun - roast chicken, roasted zucchini & summer squash with homemade rice-a-roni

Mon - hamburgers, pasta salad

Tues - greek chicken thighs, spinach & orzo salad

Wed - pizza night. homemade pepperoni pizza, caesar salad

Thurs - spaghetti with homemade sauce & garlic bread

Fri - appetizer night (meats, cheeses, toasty baguette slices)

Friday: Out to Miller's Ale House with DH and friends

Monday: Grilled sausage patties w/ shredded mozzarella on whole wheat kaiser rolls with a side of baked sweet potato fries

Tuesday: I'm going out w/ friends...DH is on his own!

Wednesday: Honey sirloin steaks w/ a side of roasted red potatoes

Sat: Ate out...Dh and I split a burger and Fish & chips mmmmm

Sun: Oven roasted Chicken and potatoes

Mon: Chicken Marsala, baked ravioli & sauteed broccoli

Tues: Taco Tuesday! Yellow rice & black beans, guac and all the fixins

Wed: Little League Game Day Hotdogs, beans, & Chips

Thurs: Leftover Baked Ravioli with meatballs and salad

Fri: Pizza/leftovers

Saturday - We had a communion party

Sunday - We ordered in sushi; I made Emily Bites Zucchini and Chocolate Chip Muffins to freeze for breakfast/snacks, too.

Monday - Skinnytaste chicken cordon bleu rolls with Skinnytaste baked rice and peas and a side of streamed zucchini

Tuesday - Emily Bites Bubble Up Enchilada Casserole

Wed - I have late showings with a buyer client, so I will probably make Skinnytaste Meditteranean Quinoa Salad early in the day and eat it when I get home

Thurs - DS has t-ball, so we'll probably eat the enchilada casserole leftovers

Friday - I haven't really planned and I may have to work late, so probably "refrigerator/freezer pot luck"!
