Share your Passover recipes
I may be in the minority, but I happen to really enjoy traditional, Passover foods. I'm always looking for new things to add to the week's menu (and particularly to the table for the seder).
What are your favorite Passover recipes?

for the sedar we do gefilte fish as an appetizer and potato pancakes. then for the pre-meal, we do parsley, potatoes, onions and eggs in salt water. plus charoset and matzoh. Then we have matzoh ball soup. For the main meal my mom usually makes a turkey and we have it with cranberry and apple sauce. then we do lots of vegetables including an israeli salad of parsley, tomato, cucumber and onion. we might have string beans or broccoli or sweet potatoes with it at as well. for dessert we buy mostly prepackaged chocolate candies, mints, macaroons, jellies, nuts and dried fruits.
For the rest of the week for dinners I usually do matzoh ball soup, matzoh lasagna, grilled meat and veggies, etc.

I found this recipe two years ago where I made Kuglets. You make the potato kugel recipe and bake it in muffin tins. Everyone in my family loved them!

Can someone share their good potato pancake recipe? My old Jewish neighbor passed away and use to make them for us all the time. The best I ever had. No one comes close. I wish I knew how to make them.

2 cups peeled and grated potatoes
1/2 cup - 1 cup grated onion (as per preference)
1 egg, beaten
2 tablespoons flour (during Passover I leave the flour out altogether)
1 1/2 teaspoons salt
Mix it all together. Drop by large spoonful into hot oil. Cook until brown and flip. Drain on paper towels.
ETA: We serve it with a dollop of sour cream and a nice amount of applesauce.
