How many lbs of filet mignon?
For 5 people?
It's on sale in fairway for 6.99/lb
Will they slice it into individual pieces for me?

They will trim all the fat and cut them into whatever size you need. I usually do 1 1/4 inch , 2-3 per person. It really depends your crowd and what other food you will have. Is it a BBQ? Sit down? Do these ppl love to eat?

I like a nice 6- 8 oz. steak for me. If they like to eat, I'd go up a bit more. What else are you serving?

I agree that it depends on the crowd and what else you are serving, but I'd probably do 3 lbs.
Remember, meat shrinks down like 25% when cooked, so 48 oz will become like 36 oz, and then you will have about 7 oz per person. I know a "serving" is like 3 oz cooked, but honestly, most guys I know will eat 4 times that!!!
If it's a sit down dinner party with plated dinners, and the filet is the star with a couple of side dishes, then I'd err on the side of more versus less.
If you are having a larger gathering -- say, a bbq -- and making other things, and lots of sides, you can probably be a little more judicious with the portion size.

How many lbs of filet mignon?
They'll clean it up for you. I usually estimate about 5 ounces per serving, so for 5 people that would be a little more than a pound and a half. That serving size is based on the fact that I usually serve mashed potatoes and other sides with it. If the filet is going to be the whole meal than I would estimate 6-8oz portion sizes depending on the person.
