Healthy indoor meals
Normally when we're trying to eat healthy we do lots of grilled chicken, but given the weather is going to be terrible at dinner time, grilling isn't going to be an option today. What are your healthy stovetop or oven recipes? I'm trying to go carb free- natural carbs from veggies are fine, just not pasta, rice, potatoes, etc...

I do a one pot baked chicken parm that we really like; it's pretty healthy since the cutlets aren't breaded or fried:
Season chicken breast with salt and pepper. Brown 4 chicken breasts in an oven proof skillet with 1 tbs of EVOO (either thick ones or you can half thick ones). Remove them once browned on both sides. Add in about 4 cups of washed and torn kale, let that wilt. I might season with a little more salt. Put a lid to get the leaves cooked down. Once the kale is wilted, add the chicken on top and then off the heat. Spoon over the top of each breast about 2 tbs of red sauce (I like Victoria jarred sauce since it is all natural) and then sprinkle with part skim mozzerella and then a tbs of parmesan on top. Bake in the oven at c. 400 for 20-25 minutes. I throw it under the broiler for 2-3 mins after to brown the cheese.
It's so simple, minimal dishes, and is really a one pot meal. You could do a side of cous cous, egg noodles, or crusty bread if you want to add in some carbs.

If you like shrimp, this is really quick and easy (it's a modified version of "Best Shrimp Ever" on Pinterest).
Place thin lemon slices (rounds) at the bottom of a shallow baking dish.
Lay raw shrimp, peeled and deveined, down over the lemon slices (I've done 1 to 2 lbs).
Sprinkle desired herbs/seasonings over the top (original recipe called for "Italian seasoning," and recommended using the dry dressing packet of Good Seasons Italian dressing). But if you want to be healthier, less processed, etc, I've used garlic powder (or minced fresh garlic), salt, pepper, red chili flakes, etc.
Melt 2-4 TB of butter (depending on how "good" you want to be) and drizzle it over the shrimp. Then add 1/2 cup low sodium chicken broth (pour over shrimp), and I use a splash of dry white wine.
Bake at 350 until shrimp are done (no longer translucent), usually about 25-30 minutes.
This is good over orzo or pasta, but when I want to be low carb, I've served it over a bed steamed spinach (would also be good over roasted asparagus, with broccoli, etc.). The shrimp, broth, seasonings, etc. are all low cal, healthy (it's really just the butter that's indulgent, but it's spread out over several servings, and it really makes the dish taste richer than it is).
This is easy because there' s no hands-on cooking, really. And no chopping. Just throw it all in the baking dish and put it in the oven.

This. Or a simple stir fry in a non-stick pan- with no sauce and minimal olive oil or coconut oil, just enough so it doesn't stick. I use garlic and onion in the veggies and season the chicken with spices/herbs.

I agree with all of this..I LOVE my grill pan! I do chicken or turkey burgers on the grill pan and chicken or shrimp stir fry with lots of veggies! When I grill, I usually do a veggie in the oven - usually broiled asparagus or broccoli - or I'll make a big salad with tomatoes, onions, cucumbers etc.
