It's been a while since I've made a traditional quiche bc DH is gluten free but these were the two I've made most recently and both are very good.

I just made one this past weekend, i'll try to remember it..

1 cup chopped ham
1 cup chopped broccoli
4 oz shredded gruyere cheese
4-5 large eggs
1 1/4 cup reduced fat half and half
chives
salt
pepper
refrigerated pie crust

put pie crust in pie dish
add ham & broccoli to dish, add cheese on top
whisk together eggs, half and half, herbs, salt/pepper
pour over other ingredients

Bake at 425 for 30-40 minutes until top is browned.

I find when cooking quiches, you need to cover the pie crust with foil and take it off for the last 10 minutes of baking otherwise the crust overcooks.

The recipe was really delicious, and i think you can pretty much change it up with whatever meats/herbs/cheeses you want!

U might be able to get away with using potatoes as a "crust"

I made one for yesterday's brunch. I made a traditional "pie" crust but I added grated Parmigiano to the dough Chat Icon OMG

Spring Quiche

I caramelized one bunch of finely shaved leeks or ramps if you can get them
steamed artichoke hearts, fresh green beans
raw asparagus
Shredded parmigiano reggiano
Shredded asiago (not too much, it's pungent)
Freshly shredded gruyere
Fresh chopped italian parsley
7 eggs
1/2 cup half and half
black pepper

9" pie plate: Line the crust with the caramelized onions. Beat the eggs, cream, pepper parsley and cheeses. Stir in vegetables. Pour into the crust, place on a baking sheet, and bake at 400 for 40 minutes (approx). If it starts to get too brown, you can cover it with a flat piece of foil.
