A vegetarian dish for Christmas menu?

SIL is a vegetarian, she used to eat chicken and fish but now is 'full vegetarian' as she says, we are hosting 10 people and she is the only vegetarian, is there a dish i can make for her that isn't too complicated??

maybe make her a simple pasta dish of penne with broccoli, garlic EVOO and fresh grated romano.

And maybe as a side, Caprese salad (fresh mozz and tomato/basil)

Or Eggplant Rolatini is pretty easy and delicious too, and everyone can eat that.

What are you serving? You are prob already making a few vegetarian side dishes. I wouldn't make an individual dish just for her. I think that would make me feel funny if somoeone did that for me. I would add a filling vegetarian dish that everyone likes. Like another poster suggested eggplant rollotini or pasta primavera.

Eggplant rollintini is delicious. I'm not a veghead, but often get this at events when it's served. Everyone loves this!

I'm a vegetarian and there is always a pasta dish. I've made eggplant rollatini, but I personally DON'T find it easy to make b/c of the sweating of the eggplant and such. I will make baked ziti, lasagna, stuffed shells, whatever.

As another poster said, I'm sure you have lots of other meat free dishes, so a pasta dish is great!

My MIL is great. If we have a holiday and she is making a meat soup, she'll pick up a soup from trader joes for me. All she has to do is heat it up. So I don't know if you are serving soup, but most are made with beef or chicken broth, so its just a thought to have one for her.

As an aside there is one veggie that comes to my ILs on Xmas eve. She won't eat any of the fish, so MIL makes a small pot of plain marinara sauce to serve instead of clam. She also makes a bunch of sides such as rice with noodles, some kind of glazed carrot, an asian veggie salad with edamame and I believe some kind of broccoli. Many of the appetizers are also veggie.
