kind of like a scone. It's drier than most breads.. but it is really good - especially when you stick a slice under the broiler to toast it up and then swab some butter on it.

Re: Anyone have a good Irish soda bread recipe
Here is my grandma's recipe...
2-1/2 cups flour 1 tablespoon sugar 2 teaspoons baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 3/4 cup dark raisins 2 teaspoons caraway seeds 1-1/4 cup buttermilk
Preheat oven to 350
Throughly combine flour, sugar, baking powder, salt, and baking soda in a large bowl. Stir in raisins and seeds. Stir in buttermilk to make a soft sticky dough. Turn out on a lightly floured surface and knead lightly three times. Shape dough into a round loaf and place on a greased baking sheet. Cut an X in top of loaf with knife and bake for 35-40 minutes.
One thing I added myself this year was Jameson raisins. I soaked the raisins overnight in Jameson and added them to the mix. The Jameson made the raisins juicy and sweeter. It didnt taste at all like drinking Jameson, and you wont get drunk off it either. Just added a little flavor.

Re: Anyone have a good Irish soda bread recipe
*UPDATE!
Okay last night I made the Irish Soda bread "scones" from Smitten Kitchen... and HOLY MAGNOLIA! They were AMAZING! Here's the recipe from Smitten Kitchen:
Irish American Soda Bread Scones Adapted from Cook’s Illustrated
Yields 8 mini-bread “scones”
3 cups all-purpose flour, plus additional for work surface 1 cup cake flour 1/4 cup granulated sugar 1 1/2 teaspoons baking soda 1 1/2 teaspoons cream of tartar 1 teaspoon table salt 5 tablespoons unsalted butter (4 tablespoons softened, 1 tablespoon melted) 1 1/4 cups buttermilk 1 egg, lightly beaten 1 cup currants or raisins 1 tablespoons caraway seeds (optional)
Heat oven to 400 degrees with a rack in the upper-middle position. Whisk dry ingredients (flours, sugar, baking soda, cream of tartar and salt) in a large bowl. Work the softened butter into the dry ingredients with a fork, pastry blender or your fingertips until the flour mixture resembles coarse crumbs.
Add the wet ingredients (buttermilk and egg), currants or raisins and caraway seeds, if you’re using them, and stir with a fork until the dough just begins to come together. Turn out onto a work surface (CI says you need a floured one but I didn’t agree) and knead until the dough just becomes cohesive and bumpy. You’re not going for a smooth dough — CI warns that this will make it tough.
Pat dough into a round and use a knife or dough divider to cut it into 8 wedges. Form each wedge into a round and place on a parchment-lined or greased baking sheet. Cut a cross shape into the top of each. Bake for 15 to 20 minutes, or until the internal temperature reaches 170 degrees (this is especially helpful in this recipe, where doneness is hard to judge from the outside). Scones should be golden brown a skewer should come out clean. Remove from the oven and brush with butter before cooling to room temperature. Eat on day one.
--
I made them and baked 4 immediately... they were SO delicious! I left out the caraway seeds. They really did taste like scones, but not as sweet... they were crusty on the outside and soft and doughy on the inside. Mine needed 16 minutes to bake.
I wrapped the other 4 in plastic wrap and froze them, then this morning I baked them so we could have them for breakfast. They were SO GOOD! They needed about 25 minutes to bake because they came straight out of the freezer.
I think these would be perfect with other things inside... blueberries, chocolate chips or even flavored with vanilla bean!

Re: Anyone have a good Irish soda bread recipe
Here is mine:
Lori’s Irish Soda Bread
Ingredients: 4 ½ cups flour (sifted) 2 teaspoons Baking Powder 1 teaspoon Baking Soda ½ teaspoon Salt ¾ cup Sugar 6 tablespoons Butter 1 cup Raisins (separate clumps) 1 cup Currents (separate clumps) 2 cups Buttermilk
Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, salt and sugar. Mix thoroughly. Combine raisins and currents in a plastic bag along with 1-2 tablespoons of dry flour mixture. Shake until well coated. Knead butter into flour mixture until grainy. Add raisins/currents to flour/butter mixture. Add buttermilk and mix thoroughly. Separate in to two loaf pans or one 9” x 9” pan (lightly coated with flour). Your preference of shape. Bake at 350 degrees for approximately 60 minutes. Check occasionally with a cake tester to see if loaf is completely baked through.
