Re: baked breaded chicken cutlets
- i dip in egg first - mixture of bread crumbs, locatelli cheese, s/p, garlic powder and chopped fresh parley - then i bake on 350 on either parchment paper or my pampered chef stoneware. - I know some people like to drizzle olive oil or veggie oil over the chicken to give it more of a 'fried' taste, but I just like them crispy without the grease.

At 350 I'd say 45 mins. or so. What I usually do is take the biggest piece and cut it in the middle to make sure it's cooked through.
I make mine the same as the above poster, sometimes with cheese, sometimes without; or sometimes instead of using en egg I'll use plain yogurt or mayo or a mixture of honey mustard & mayo before breading.
ETA: I just noticed you said thin cutlets, so they probably won't even take that long.

Re: baked breaded chicken cutlets
i've made mine with panko (the japanese breadcrum) and the they come out crispier. Still not as juicy as fried so I have to keep working on it.

I usually use panko which I season with dried herbs and parmesan cheese. I feel like panko comes out decently crispy when baked.

Re: baked breaded chicken cutlets
For crispier chicken I usually bake at a higher temp (at at least 375, usually at 400 though). Boneless chicken on the thinner side would probably only need about 20-25 mins. I usually take 1 out and cut into the middle to make sure it's done. It will be dry if you overcook.

Re: baked breaded chicken cutlets
I warm up some olive oil with garlic in the microwave. Dip the chicken in that and then in a mix of bread crumbs and parmesan cheese. If you're doing really thin sliced chicken, 20-25 min is usually good. I'd rather cut one open to check it than over cook them.
