Coconut Butter Cookie Recipe
Made it this weekend and it is delicious, wanted to share- it is so easy (i didnt mix the chips in, what i did was melt them and dip the cookie in half way after it was cooled) Enjoy!
COCONUT BUTTER COOKIE
1/2 c. granulated sugar 1/2 c. brown sugar 1/2 c. butter, softened 1 egg 1/4 c. milk 1/2 tsp. vanilla 2 1/4 c. flour 1/2 tsp. baking soda 1/2 tsp. salt 1 c. chocolate chips 1 c. coconut
Cream sugars, butter and egg. Add milk and vanilla, then add rest of ingredients. Mix all together. Chill for 2 to 3 hours. Bake on greased cookie sheet at 325 degrees for 10 to 12 minutes. Makes 4 to 5 dozen.

I am making these now and I have a question. After mixing the ingredients, it doesnt looke like a normal cookie dough. It looks kind of dry and crumbly. Is that how it is supposed to look? I just stuck it in the fridge for the 2 hours. Maybe it will look different after

I made these today and they are delicious cookies....I used white chips instead of chocolate and added a 1/2 cup of macadamia nuts.
