It depends what I make. I use a light olive oil that has a higher smoke point (230 C), for most things. I will also use vegetable oil so that I get a more neutral taste. Again, it depends on what I'm making. I use EVOO for some things (tomato sauce, bolonese, etc.).
The only thing I'm concerned about with about smoke points is burning my food. There is no scientific evidence to support the cancer claim. I also don't care if it's GMO or not. No evidence against them either.

Cooking oil - what to use?
Still confused, lol.
Some of you mention olive oil, then theres a post saying Olive Oil is bad when heated.
Then some of you mention canola, then theres a post saying its not good, etc...

Corn oil has gmos. I would stay away. I use evoo for veggies and things like that. And coconut oil for eggs and fried rice and anything Thai or if I want a coconut flavor.

I use olive oil and peanut/vegetable oil. Olive oil is best for dressings, certain types of cooking, etc. but vegetable or peanut oil can handle a higher heat and is best for like frying and cooking with high heat on the stove.

Depend what I am making. Olive oil is great but has a distinct flavor. So if I am sauteing garlic etc for an Italian dish, definitely olive oil.
For certain stir frys the recipe calls for Peanut Oil- it works better in woks etc because it doesn't smoke at high temps
For eggs, I use a little butter in the pan or just a spritz of like a Pam.
For baking, I use Smart Balance oil which is a blend of canola oil and something else.
For popcorn I use coconut oil. SOOO yummy
Coconut oil also has a distinct flavor though, but you can get the refined one which has no taste if you aren't into the coconut flavor

I use olive oil when sauteing at a medium flame. If I am going to fry something like a chicken cutlet that needs to sit in the oil and get very hot then I use grapseed oil.
