Dinner when DH is not home
What do you do for dinner when you're on your own?
I'm guilty of eating a whole box of Kraft mac and cheese one night. When DH got home, he was like "so what did you eat, are there any leftovers?". I couldn't even look him in the eye. LOL!

Cereal, half a cake, cookies, any type of frozen entree if I was too lazy to order in. Not all in one night, lol! These are some of the things I used to consume when I was alone and didn't have to cook.

Often just popcorn and ice cream.
Sometimes a tofu stirfry or soup or something because I love tofu but DH won't go near it.

to be honest I really cook for DH...if it was up to me, I would be happy with a bowl of cereal or something frozen.

I will usually still cook, at least he can have the leftovers. If not, I might have soup or a veggie burger or english muffin and eggs.

leftovers, pasta, a veggie burger, salad, or... experiment with something i have in the house. I love to cook, don't mind cooking just for me

cereal yes, I also had a box of mac and cheese leftovers pasta and sauce PB&J sandwich grilled cheese can of soup
BTW... I don't really cook when DH is here. LOL

I'll make english muffin pizzas, or use pizza dough to make my own pizza. grilled cheese a big salad ravioli (just through it in boiling water) pasta (again, just make enough for me and DS) Frozen soup that I made weeks earlier-just defrost for a quick dinner

I've been known to consume an ENTIRE, yes an ENTIRE block of cracker barrel cheese, which is like 10 servings.
I usually snack on cheese and crackers with fruit and veggies or I go for all junk...
a donut or a bunch of cookies or some candy
yikes!!

I cook for the kids more than my hubs so if - for some odd reason - he's not home, we eat the same as usual. HOWEVER.. if I'm completely on my own I don't even bother cooking. I open a bottle of wine, run a bath and have a real liquid evening!

The other night I knew DH was coming home late and I was in the mood to cook anyway, so I made homemade nachos.
Layered baked tortilla chips in a casserole pan Half a can of turkey chili half can diced tomatoes (rinsed, drained) half can black beans (rinsed, drained) half can corn (rinsed, drained) Hot Sauce Shredded Pepper Jack Cheese
Repeat once more.
Came out pretty good and I was satisfied

usually cereal or eggs. but I usually have to make something b/c the boy needs a real meal now too.
gone are my days of pretzels with cheddar cheese and a bottle of vino!

I usually make dinner anyway because I have to feed DS, but on the rare occassion I can get away with feeding him something simple like grilled cheese or leftovers, I will make myself a PB & J or something simple like that. I won't cook a full-meal for myself.

This is my dilemna, since DH travels for weeks at a time. He is in Malaysia for the next two weeks. Now that DS eats real food and I am 5 months pregnant, I can't just make junk food for me.
I was thinking of making a tray of baked ziti, that will last me for a few days I figure. I make a lot of chicken because it's easy. Sometimes I'll make a steak. I make a lot of pasta.
I need to spend some time menu planning this week.
