I will usually go to my parents or out w/ a friend or my mom.
If I am home then leftovers or I throw something together.

I eat downstairs w/ my parents or have a lean cuisine. If I'm out, I might pick up fast food, but thats rare.

The other night I knew DH was coming home late and I was in the mood to cook anyway, so I made homemade nachos.
Layered baked tortilla chips in a casserole pan
Half a can of turkey chili
half can diced tomatoes (rinsed, drained)
half can black beans (rinsed, drained)
half can corn (rinsed, drained)
Hot Sauce
Shredded Pepper Jack Cheese
Repeat once more.
Came out pretty good and I was satisfied 
what a great idea. I have all of this in the house and DH is working and I have to be home tonight for work.

DH works late, so I almost always eat alone. I usually make something for the both of us & just put his in the fridge to heat up later. BUT...there are times I said forget it & had just a salad or cereal and told him to fend for himself when he got home.
