Disney with a 2 year old
we took ds at 2....
He LOVED MK, he had fun at Epcot.....
There was plenty of stuff to take him on.... Nows the time to go before you have to pay for their admission too... He loved meeting characters, its a small world, buz light year, racetrack, railroad, country bears, jungle boat, the movie.

Took DD at 18 months and we had a BLAST! We got the meal plan and just shared everything with her! It was totally worth the money doing the character meals!!! Such a great time! Can't wait to go back!
ETA... My DD talks about Disney all the time... we made a shutterfly photo book and she looks at it at least 2x a week... she remembers it and prob more so b/c she looks at the pictures all the time. I just wanted to through that idea out there so you can instill the memory in your child lol

Our first trip was Sept & DD1 was 4 1/2, DD2 was exactly 2 (she loved her birthday pin & cupcakes are restaurants).
I originally thought too young......I was SO WRONG!!!!
She had a BLAST! We were chosen to open MK at Rope Drop & you can't imagine her face when she realized all the characters were next to her AND THEN MICKEY!!!!! She could care less about anything else! She danced at the parades, loved the HS Disney jr shows & beauty & the beast show, AK safari/lion king/memo shows. She ran up & hugged all characters we met. Of course she didn't go on the big rides, but DD1 barely did either. But all the rest she LOVED!!!!!! She even lasted for fireworks, parades, even Halloween party's second parade. And both often napped during the day (in the double stroller) & gave us some quiet adult time strolling the parks.
We were on the meal plan, so she would eat off ours. Sometimes we had extra credits & ordered a meal for her too.
Not a day has gone by that both don't ask to go back. She was Cinderella's Castle, "Dreams Castle" because of the show they perform in front of it.

Disney is awesome for young kids. My twins were 2.5 and my baby was 8mo when we went in September. Aside from the few roller coasters and Tower of Terror, all of us (including the baby) went on everything. I was shocked that they let me bring the baby on, but even he loved it. It is months later and the kids are still talking about it.
Under 3...kids are free.
We got a meal plan for me and DH. WHen we went to buffets (Ohana, Chef Mickeys) they were free. Other places, we either brought something for them or ordered something small for them.
We are going back next year and can't wait.
We went to all of the parks and every one was very age appropriate for them. We had so much fun!!!!! Not a waste at all IMO.

WE go almost every year since my 8 yr old was 2. Just went to MK for the day and my daughter is 2.
MK is the best place in my opinion for the 2 year old. My sons were great there at that age. They loved all the rides (shows not so much - but they were too full of energy to sit thru them). My daughter loved the shows when she was 17 mos but we just went back at 2 and she flipped at the shows. She was scared of the dark!!! She hated all rides too except the few that are outdoors (she loved Dumbo, carousel the best). She was the hardest there at this age. Bu she loved being there, loved seeing the charatcers and loved the parade.
AK is the 2nd best for kids that age in my opinion. I wouldn't go with young kids to Hollywood Studios. There wasn't much for my daughter ot do but it is my 5 and 8 yr old's favorite park now. I'd spend a lot of time with her looking in the gift shops while her brothers went on rides. Epcot is fun - my kids like the indoor game places but haaaate the countries and that there aren't too many rides that they love - they rides are just ok.

We are big Disney fanatics and have taken our kids since they were babies. Those who say that 2 is too young obviously haven't been there with a small child. There is so much to do that we barely have enough time to get it all in. Only a handful of rides have a height requirement. Goofy's Barnstormer (it;s been renamed but the name escapes me)is the only ride in Fantasyland with a height requirement.
These are some of the things we have done at each park.

As for meals, at that age we tended to stay toward buffets since it would give us a lot of food options. You could also do counter service and go with the flow. I'm not big into the dining plan, since we do a lot of character meals.
