Good potato salad recipe without mayo?

Maybe like a german style or something? Anyone have a good one?

I make one with red potatoes, ranch dressing, shredded cheddar cheese, peas, and green onions that's always a hit!

I make a warm potato salad with with a shallot and bacon dressing. It is so delicious!

German potato salad is always a hit in my house.

I always just google recipes.

I don't make it often because it feels like it takes a long time, but it is so, so good!

I like the other ladies suggestions, as well.

I LOOOVE German Potato salad and the boys do too! But it's so unhealthy..

Cut potatoes into chunks and boil inw well salted water until tender.. but still a little firm. Drain and set aside.

Fry up bacon (about a dozen slices) until crip. Remove bacon and set aside. Dice a 1 very large or 2 small onions and add to the bacon fat, stirring until transluscent.

Add about 5T of sugar and a half cup of white vinegar to the onions. Stir until it starts to boil. I add a bit of water too.

Put the potatoes in the onion mix and toss to coat. Add a big handful of chopped parsley and then crumble in half of the bacon. Toss until all incorporated. Crumble the rest of the bacon over it and eat up hot or cold.

If you taste and decide it is too sweet, heat a little bit of reserved bacon fat with some more vinegar and then toss over the salad. Conversely, if you find it is too tart.. heat a bit of water and add in some sugar then toss to mellow the tang.

This salad is great right away.. but is even BETTER the next day!Chat Icon

I just did this on saturday, for yesterday. Took about an hour total to make and was delicious yesterday. I served it cold though.

I've been making this warm potato salad recipe all summer. soo good.

Dijon Mustard, EVOO, lemon juice whisked together.
Toss the above with cut up boiled potatoes, scallions, and capers.
Top with fresh herbs (I use chives, mint, and whatever else catches my eye in the garden).

My grandma always makes red potatoed, garlic, oil, salt & pepper. Super simple, and yummy.

Maybe even throw in some string beans.

I make this one:
German Potato Salad

8 slices bacon *thick cut
3 tablespoons flour
4 teaspoons chopped onion
2/3 cup vinegar
2/3 cup water
1/2 cup sugar
4 teaspoons salt
1/2 teaspoon ground black pepper
1 teaspoon powdered dry mustard
1/2 teaspoon crumbled whole rosemary leaves
2 quarts mini redskin potatoes
1/2 cup chopped fresh parsley

Par boil potatoes 10 minutes. slice and put in roasting pan with a little EVOO. Bake at 375 for about 20 min. Remove and set aside. Fry bacon until crisp. Remove from pan, drain and crumble. Add flour and onion to the bacon fat left in the pan. Stir in vinegar, water, sugar, salt and spices. Cook only until mixture is of medium thickness. Add to potatoes, parsley and crumbled bacon. Mix carefully to prevent mashing the potatoes.
