How long to leave defrosted meat?
I took out some ground beef from the freezer around midnight to cook this evening. I don’t feel like having it (meatballs in a curry sauce) tonight.
Would it be good to cook it tomorrow or maybe I should throw it back in the freezer?

Don’t throw it back in freezer. Once defrosted you can’t freeze again. Honestly what I would do is smell it today. If it smells like pretty much nothing , you’re probably good til tmrw. If it’s starting to smell like “meat” (I know it’s meat but you know the smell) cook it today to be safe. Make something easier out of it if you don’t want to go through the trouble of your original plans for it.
ETA: if it smells ok today, put back in fridge to the coldest spot - for me, that’s the bottom in the back of my fridge.

Definitely don't put it back in the freezer if it's no longer frozen (which I imagine it's not!). I think it would be totally fine tomorrow.

I defrosted it in my fridge. Forgot to mention that. It was fully defrosted at about 12 pm.

How long to leave defrosted meat?
Don't ever defrost meat and refreeze. I have used defrosted meat a day or two after and never had issues.

OK, I left it and will make it for lunch tomorrow. I got spanokoptia (spelling?) instead. Lazy days…I literally just edit papers all day for my job. New job starts soon where I teach interpreters and translators. I can’t wait!
