If you were having some friends over for dinner...

what would you make? I hate spending the whole night in the kitchen cooking. Need some ideas! Thanks!

I'd make balsamic pot roast in the crock pot, roasted red skin potatoes, sautéed green beans with almonds, and salad with goat cheese, dried cranberries, walnuts in a honey Dijon dressing. A simple apple tart with good vanilla ice cream on the side.

I usually do chicken parm and pasta. I saute the cutlets earlier in the day so that once people are over, all I have to do is put them in the oven with the sauce/cheese and the pasta takes 10 mins. Simple, and it's something most people like. Chat Icon

It all depends. I have done tacos, pasta with meatballs, roasted chicken with simple sides, meatloaf, BBQ.

But really, I'd probably do a chicken and rice or chicken and potato dish in the crockpot and then have bread and salad out and do some veggies on the side. I'd do some apps, too, like crab cakes or mini mac and cheese cups.

I've made this, it's always a huge hit!! Double the recipe, and I use one package sweet sausage, and one package hot. You can make the sauce ahead of time.

I usually throw a pot of sauce on in the morning and do sausage and meatballs. It's easy and people seem to like my sauce Chat Icon

I go by their likes/dislikes.

A good fast go to for me is Artichoke Chicken Bake with pasta and Spinach Salad with Bacon Vinaigrette

Another favorite:
Grilled Steak, Baked Potatoes, Caesar Salad, Broccoli

I have done lasagna. (I was able to make it earlier in the day) so then it was just basically serving.

Also have done turkey in a crock pot, tacos, spaghetti meatballs. We also have done all apps with cheese crackers, olives, fresh mozzarella, roasted red peppers, and made our own pizzas.

we have gone to houses that have done spaghetti and meatballs, chicken Parmesan, steak stir fry or pizza.

My friends did this recently.

Osso Bucco (simmers a while but the prep is easy)

This one is pretty similar to what I do:
Artichoke Chicken I use more garlic and I add sliced peppers. Sometimes I omit the mustard and add canned tomatoes.

The salad.. is baby spinach leaves, sliced mushrooms and red onion. I cook bacon until crisp and then make a vinaigrette with some bacon drippings, a little olive oil and red wine vinegar plus salt, pepper, garlic and dijon mustard. Put bacon on the salad and pour the warm vinaigrette over it all.. it will wilt slightly but it's great and the flavors match so well with the chicken dish!

I've made sauerbraten in the crock pot and it's easy and to die for. Always a great success. Sauce with sausages is always easy or a baked ziti.
