In serious need of healthy meal ideas!!!!
My 3 year old DD is a picky eater... Loves her sweets and carbs but not much more! Anyone have some good ideas for some healthy meals? Or ways I can hide veggies or make her eat more?

have you tried vegetable spaghetti?
cut zucchini, squash, carrots, sweet potato, etc on the cheese grater, mix it with a bit of regular pasta, add some kind of sauce and hope for the best!

DD is a picky eater too. She really likes a broccoli bake I make. It has broc, cheese, egg, etc in it so I feel like she is getting some nutrition. I sometimes add shredded chicken in it too. Let me know if you want the recipe
ETA recipe
Broccoli Bake
-2 packages (block) frozen chopped broccoli defrosted -3 eggs (4 if you add chicken) -1/2 cup grated parm cheese -8 oz of shredded mozz -1 cup of Bisquick -1/2 cup olive oil -1 or 2 cloves of garlic (minced)
Mix it all together spray a 9 x 13 glass pan with cooking spray Bake 350 25 minutes covered and 25 minutes uncovered.

Barilla makes pasta with a full serving of veggies in it. My son is a big carb lover too, and not so into veggies, so this pasta was a great find (thanks to NervousNell!). There are 3 different kinds.

Check out Jerry Seinfeld's wife's book - Deceptively Healthy. She puts baby food in EVERYTHING. muffins, chicken cutlets, everything. I don't know how much vege/fruit you actually get in each meal per serving, but it could help.
Maybe you could have DD help you in the kitchen. DS is allowed to pick a vege.
I make him butterfly french toast sticks- put one french toast stick down the middle of the plate, put some apple slices as wings and then decorate with grapes, strawberries or whatever else I have.
Make it about presentation. As gross as this sounds, I made DS a very pretty snack of ritz crackers with string cheese, grapes and strawberries. He wanted a strange assortment. I made it pretty and he LOVED it.
For dinner, DS used to eat all his pasta and leave his meat. If he was supposed to eat 10 bites of meat and 10 bites of pasta, I'd only put 5 bites of pasta on his plate. If he ate one bite of meat, I'd give him more pasta - eye for eye/bite for bite.
KETCHUP!!!! DS puts it on the strangest things - including apples (one bite fell in it one day and he claims he likes it). Hey, he's eating apples.
Another tip I used to get DS to eat was do "cheers". We did "meat cheers" (like if you were toasting and everything tapped glasses) only we did it with our forks.

Get your child involved...shopping, cooking, have them even try raw veggies (my 4 yo likes veggies raw with a little evoo s&p, even zucchini) Try pureeing beans & such into sauces, but still offer some of the veggie you are eatting so thry get used to it being apart of the meal Experiment with dips, sauces (low fat ranch & hummus are hits in my house) Pancakes with fruit in it for dinner is a house fave (pumpkin & banana wheat) Set good examples be persistent...they change their opinions all the time Look at their habits over a course of a few days See what they do like & offer it (my dd can eat cherry tomatoes & chickpeas everyday, if I let her) She loves veggie sushi (but won't eat the veggies separate when I make it)

My DD loves grilled cheese. So I started putting a slice of chicken or turkey breast and some diced up spinach in it. She takes it every time.
I will also use my immersion blender to blend up steamed veggies like broccoli, spinach, carrots, zuchinni etc and add it to tomato sauce or whatever sauce may accompany what I am cooking.
There is also yogurt now that has a veggie and fruit in it. I believe it's yo baby, more sugar than I like to give her but she loves them and I like that she's getting some veggie/fruit on a difficult day. There is one with green beans/pear another with squash/peach and a sweet potato/apple one.
Raviois or tortilinis! There are ones with pumpkin, spinach and cheese, etc...these sometimes work for

For a healthy lunch you might want to make it fun with variety. Your little one might not try all the foods at first but giving choices really helps. You could do this using an ice cube tray and filling it with lots of healthy choices and some familiar foods that you know she likes as well.
Also, with veggies, having a dip always helps. And I have a garden during the summer and being able to pick right from the garden makes them more willing to eat the veggies. You can take her to the store and have her pick out some veggies.

I saw this in a patterning mag referred to as a "nibble tray" I put four cupcake papers in a little tupperware to do it.

I want to also add that with my kids I find that dinner is their worst meal of the day. They both seem to eat much better earlier in the day and are more willing to try foods for snacks or lunch than at dinner.
PS- DS was telling his teacher that he eats seaweed as a snack and I guess his teacher didn't believe him and said that it must be spinach not seaweed. But DS was right, he eats seaweed as a snack from trader joe's.

ITA 100%!!! DS will eat anything that he helps to make. Yesterday he helped me cut up cucumbers for tabboulleh with a plastic kiddie knife, and he's not even 2 He will also eat anything between 2 pieces of bread, so sandwiches are a huge hit.
Also, giving another option when they refuse something reinforces that they don't have to eat what you prepare, so my advice would be to stay away from doing that if you can.
Keep offering, it can take up to 15 times for a child to develop a taste for something (or even try it).
Also, show DC that you eat it too.

Dr. Sears promotes this for picky eaters, I think it's a wonderful idea! It gives them a little control over what they eat, which I think a lot of kids want.

Great ideas! Except I'll be using them on DH instead At 9 months DD is a great eater but my Husband on the other hand is the worst! I really need to get something besides cereal & hot pockets in his system
