Im always looking for new ideas as well. Lately Ive been cooking on Sunday for the week ahead. I have been cooking a whole chicken and taking pieces off to feed DD with. I buy from a local farm on Saturday. Easy to prepare...if you need a roasting recipe Ill post it. I also make meatballs of all kinds and wrap them up individually and take them out in the afternoon if thats what shes gonna have for dinner. I just made chicken meatballs with pureed carrots and applesauce, breaded them and baked them. She loved those. Nice and soft..and filled with fruit and veggies.

My kids are loving:
edamame-frozen organic-pop in a corningware and microwave for 6 minutes or so.
purple sweet potatoes
lima beans
cut up grape tomatoes
Whole foods cold cuts. I buy the no salt turkey and the black forest ham. Ask them to slice to 40. I usually get 1 or 2 slices and it is good for 3-4 meals.
For dairy allergic Mom's I figured out how to make mac n cheese!
I melt a bit of the Earth Balance margerine, add some tofu cream cheese and then mix with pasta
Trader Joe's has great prices on organic potatoes. A pretty large bag is around 2.99. I give this to them either chopped or I mash it up and let them dig in.
Polenta has always been a staple over here and I've given them the Target brand potato gnocchi.

I made a quinoa burger/pancake for her that she loved with spinach and carrots, the recipe is on the whole foods website. I also made her zuchinni pancakes that she loves
I also have been making her quiches..I need any way to hide veggies...
she's loving cut up berries, blueberries (although they give her smurf poop) and strawberries, and raspberries!
