Onions

I have a ton of onions so thought I would make an onion soup. I don't eat beef so French onion is out. Anyone have a vegetarian onion soup recipe? I eat cheese but don't currently have any in the house but I do have cream cheese and bread to make it similar to french onion.

Or any recipes that call for onions.

This is one of my FAVE recipes. It isn't soup, it's quiche.

I caramelize a couple of large yellow onions in butter. I mix 6 large eggs with some heavy cream and a half packet of Lipton onion soup mix. Place onions in the bottom of a pie crust, pour egg mixture, and then top with Gruyere or other mild white cheese. Bake at 350 until browned and cooked through.
