I like to bread and fry up lots of chicken cutlets, then divide and freeze them. You can heat them with sauce and cheese for chicken parm, you can make various sandwiches and paninis with them, and you can heat them, cut them up and toss them on a dinner salad too. So easy and versatile.

Gotta agree with the chicken cutlet idea. I had made curried chicken last week, but DH only ate 1 cutlet. So I froze it since I didn't know when he'd eat it again. With the chaos of this week, I quickly heated it up and served it over rice. Saved me A LOT of time!
