Recipe with lots of eggs?
I have 6 eggs that are going to go bad soon. What can I make that isn't a quiche or a frittata?

Egg salad?
Eggplant parm? I don't use bread crumbs for my eggplant parm. Instead I dip the eggplant in flour, then dip it in an egg/Parmesan mix and then fry.
Custard of some sort?
Eggs in purgatory on top of toast, rice, or pasta?
Carbonara?
Breakfast for dinner?

A bread based dish that needs an egg based custard to bake in, like a savory strata type dish, or an oven-baked French toast.
You could do a soufflé with egg whites, or an angel food cake. Separate out the yolks and make homemade mayonnaise or hollandaise sauce or something like that!
Deviled eggs -- there are so many different filling/flavor options on pinterest.
If you have an ice cream maker, ice cream that calls for a custard base (like French vanilla).
ETA - I have a recipe for a carrot soufflé - it's not a true soufflé in that it uses whole eggs, not egg whites. It's awesome and people love it (great as a side dish for grilled or roasted meat). If you do a search on this board, it will come up. I've definitely posted it on here a few times. It calls for 6 eggs.
