I don't eat fish, but this is DH's favorite. I make it for him all the time. I don't usually make the accompanying sauce though.

This is probably no help but one reason I love salmon is that you really don't need a recipe! I just put some EVOO, maybe some minced fresh garlic and lemon juice, s&p and pan sear it or bake it.

I love blackened salmon. I rub the filets with a little bit of olive oil & then sprinkle them with blackened seasoning on both sides. Set your cast iron skillet on high & let it get hot where it's smoking. Place your filets in and sear until you can easily slip a spatula underneath to flip to the other side (that's when you know a nice crust has developed). I serve it over wilted spinach with lemon.

marinate with asian flavors (soy, rice wine vinegar, lime, fresh garlic and ginger, scallion, brown sugar) and grill or broil. if you are broiling (or even baking) sprinkle some brown sugar on the top and it will get a yummy crust.

Salmon Recipes
Season my salmon with Ariosto fish seasoning ( salt, pepper, rosemary, sage, garlic, oregano, etc) which gives great flavor. Then add some white wine and lemon juice on top. Then bake. So easy and sooo delicious!

tonight I am doing lots of fresh minced garlic, thai fish sauce, soy sauce, honey, and a little seafood stock to go over rice.

I just bake it with a tablespoon of an herbed butter, salt, pepper and a splash of white wine..Yum!

Salmon Recipes
I get enough for 2 meals. Night one, I poach the whole piece in water, soy, terriki and garlic.
Night two I make salmon burgers Salmon bread crumbs egg zest and juice of a lemon herbs (fresh basil, or italian seasoning - whatever I grab) old bay
mix salmon, egg, breadcrumbs, lemon juice/zest and herbs together. Form into patties. I sprinkle both sides with old bay and then a little more breadcrumbs. Let it sit for a few minutes so they don't crumble. Then I pan fry until golden brown on both sides and warm thru (to make sure the egg is cooked).
I like to really shred my salmon, not leave it in chunks. I don't really measure. You can make a very small one to check for seasoning before you cook all of them off. I have used panko, regular and whole wheat breadcrumbs.

my favorite is making a glaze with honey, brown sugar, lemon juice, and dijon and putting it all over the top of the salmon then baking it for 20-25 minutes at 350. Always turns out great!

i love to bake it in the oven, skin side down with fresh dill on top. squeeze of lemon after it's done. so easy.

I'm not a big fan of salmon, so I just cook it with some salt, pepper, and evoo and then mound on avocado, tomato, mango salsa to hide the salmon flavor. Delicious! Lol
