***weekly menu 1/15***

Sat: Went to a family party at my cousin's house

Sun: Steak, Oven-Roasted Rosemary Potatoes, Creamed Spinach & Corn

Mon: Baked Chicken Cutlets, Burnt Broccoli, & Brown Rice Pilaf tossed with peas and mushrooms

Tues: Soup & Grilled Cheese

Wed: Spiral Sausage (fennel & tomato basil) over Garden Delight Rotini tossed with butter & parm and salad

Thurs: Leftovers

Fri: Pizza for the kids/we're out

Sun- I'm trying Pernil again. Hope it works. Served with oven roasted string beans and a potato, celery root, and parsnip mash.

Monday- Chicken Chili from Skinny Taste.

Tuesday- Greek Style Shrimp with veggies

Wednesday- Curried coconut pumpkin soup from Skinny Taste with dark pumpkin seed bread.

Thursday- Asian Turkey meatballs from Skinny taste with broccoli.

Friday- Fish or Mussels not sure of the prep.

Saturday- Fish or Mussels, whatever I don't do on Friday.

Saturday- Pioneer Woman's beef short rib (Sunday is my cheat day Chat Icon )

Monday: Turkey Stuffed Peppers, Bean Salad

Tuesday: Pot Roast with braised carrots, onions and potatoes, Buttered Noodles, Salad

Wednesday: Chicken Souvlaki, Greek Salad, Lemon rice Pilaf

Thursday: Chunky Garden Sauce, Whole Wheat Spaghetti, Chicken Sausage, Garlic knots

Friday: Lemon-Garlic Chicken Breasts, Quinoa, Broccoli

Saturday: No effing clue.

Sun.- breakfast for dinner: challah bread french toast and crispy bacon

Mon- pork tenderloin with gravy, sausage stuffing and roasted brussel sprouts

Tues.- lemon chicken, baked rice and peas

Wed.- shredded pork tacos, refried beans, homemade guac and chips

Thurs.- chicken cacciatori with angel hair pasta

Fri- take out

Monday: Crock Pot Chicken a la Criolla with rice

Tuesday: Creamy Salmon Pasta

Wednesday: Lemon chicken with artichokes and capers

Thursday: Fried Pierogies and sautéed spinach

Friday: Cheese Fry Chicken

Saturday: Roasted vegetable meatloaf and burnt broccoli

Coaching DH to make the following... our menus are BORING lately because of my gestational diabetes!

SAT - homemade shake n bake drumsticks, brown rice, vegetables
SUN - bowtie pasta with sausage & broccoli
MON - beer can chicken (again, we loved it!), couscous, vegetables
TUES - turkey meatloaf, crispy red potatoes, peas
WED - cheesy chicken and wild rice casserole (using leftover chicken)
THURS - steaks, brown rice, sliced cucumber
FRI - pepperoni pizza, salad

Damn Debbie you beat my post by 5 minutes! You win, I'll repost mine here LOL

We are moving in 3 weeks so I'm trying to use up freezer/pantry items from now until then.

Saturday - grilled london broil, grilled garlic bread, green salad with champagne vinaigrette

Sunday - buffalo wings, fresh guacamole and chips, spinach and artichoke pinwheels

Monday - tilapia oreganata, roasted balsamic veggies, couscous

Tuesday - Bobby Deen's Light Baked Spaghetti casserole

Wednesday - homemade baked chicken nuggets, rice, buttered corn

Thursday - burgers with caramelized onion, sweet potato fries

Friday - I'm going out

Baking - chocolate cupcakes with cream cheese frosting, something with pumpkin so I can use up 2 cans of pumpkin that I have

How do you make it???



I use a recipe from Food Network. The spice rub MAKES this chicken! I'll give you the oven version, which is what we do - but you can also do it on a grill.

2 tbsp garlic powder
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp paprika
1 tbsp kosher salt
1 tbsp freshly ground black pepper
1 tsp cayenne pepper (we leave this out - we ran out of it and it was fine without it)
1/2 cup extra-virgin olive oil
zest of 1 lemon
1 (3 1/2 to 4-pound) chicken
1 (12-ounce) can beer

Directions
Preheat oven to 350.

Mix all ingredients except chicken and beer until they are well blended. Rub all over inside and outside of chicken.

Pour out a few ounces of the beer and sit the chicken on top of the can (legs at bottom, wings at top. Stand in shallow roasting pan.

Bake 1 hour or until juices run clear.



SO SIMPLE and comes out so juicy!

2 cups shredded jack cheddar cheese
6 scallions, chopped
½ cup bacon bits
1/2 to 3/4 bottle of ranch dressing
Grill seasoning(I like McCormick's)
Olive oil, salt and pepper
                            
Cut the potatoes into bite-sized pieces (about 1 inch), toss with a little olive oil and grill seasoning. Roast on a baking sheet at 400 degrees for about 30-40 minutes until fork-tender and crispy (turn the broiler on high at the end for 3 minutes if they aren't as crispy and brown as you would like).

When the potatoes have about 10 minutes left to cook, cut the chicken into one inch pieces and saute them over medium heat with a little oil, salt and pepper until no longer pink, about 10 minutes total. Combine chicken in a large bowl with potatoes, ranch dressing, about 1 cup of the shredded cheese, the scallions, and the bacon bits. Serve with extra cheese and bacon on top.
