Sunday: Shrimp Leftovers
Monday: Chicken Sandwiches and Sweet Potato Fries
Tuesday: Pasta Leftovers
Wednesday: Tandoori Chicken, Peas, and Basmati Rice

Monday: Oven roasted chicken with rosemary potatoes
Tuesday: Stuffed cubanelle peppers with Spanish rice
Wednesday: Chicken avocado enchiladas with rice and beans
Thursday: Turkey and black bean chili
Friday: Mommy's day off 
Saturday: Leftovers
I guess I'm in a Latin mood this week

Tonight- stuffed artichokes, apps
Mon.- Crockpot brisket & onions, roasted brussel sprouts and mashed potatoes
Tues.- lemon chicken, baked rice and peas
Wed.- pasta with ST crockpot bolognese and ricotta cheese
Thurs.- French onion soup, garlic parmesan ciabatta toasts, butter lettuce salad with dried cranberries and goat cheese and blush wine vinagrette
Fri.- happy hour

Sat: Dh's Homemade burgers, sweet potato fries & onion rings
Sun: Oven roasted Chicken, Brown rice Pilaf tossed with peas & mushrooms, and Salad
Mon: Smart Taste Spaghetti with Meat sauce, & Garlic toast
Tues: Fish Sticks, Chicken Nuggets, & Mac 'n Cheese with veggies
Wed: leftovers
Thurs: Filet Mignon, roasted potatoes or red mash, and a yummy veggie (maybe burnt broccoli)
Fri: I'm out. Pizza for the boys

Tues - southwestern chili mac (using leftover chicken)

Thurs - BBQ burgers with monterey jack cheese and avocado, salad
Fri - homemade shake n' bake drumsticks, brown rice, peas

Sunday - Taco Night! Lean ground beef seasoned with my salt-free homemade taco seasoning, both soft shell and hard shell tacos, fresh salsa, romaine, cilantro, olives, reduced fat sour cream and reduced fat cheddar
Monday - Homemade Baked Chicken Cordon Blue, Roasted Dijon Baby Reds, Roasted Green Beans
Tuesday - BBQ Turkey Sloppy Joes on Light Hamburger Buns, Roasted Potato Wedges, Carrot and Celery Sticks
Wednesday - Baked Salmon, Brown Rice, Roasted Brocolli
Thursday - Garlic Flank Steak, Baked Potatoes, Roasted Brussel Sprouts
Friday -- Take Out Night

Just got back from Xmas vacation, back to cooking! Luckily I froze a lot of stuff before leaving.
Sunday- Roasted chicken, mashed potatoes, broccoli and gravy
Monday- Chicken noodle soup
Tuesday- Duck Shepard's pie
Wednesday- Shrimp Bisque
Thursday- Greek turkey meatballs and roasted veg
Friday- Salmon (not sure how I'm prepping it) with arrugala, pine nut, and parm cheese salad
Saturday- ?
Sunday- Pork roast or roasted duck, not sure yet.

Tues: tacos ala grandma, black beans, guacamole, rice
Wed: roast beef with braised potatoes, carrots, swiss chard
Thurs: gnocchi with gorgonzola cream sauce and peas, grilled sausage
Fri: dinner with grandpa.

Friday: DH and I tried out Riverbay in Williston Park. It was delicious!
Saturday: This was the night that we found the dog...I think we threw down a quick burger or something...I don't even remember lol
Sunday: Out with family and friends to the old BK Sweeney's
Monday: Rigatoni ala vodka with panchetta
Tuesday: Brunch enchiladas
Wednesday: Bunless pork sliders in bbq sauce with a side of sweet potato fries
Thursday: Skinny Taste chicken enchilada soup in the Crockpot

Sunday- went to my friends for dinner.
Monday-Perdue baked chicken cutlets, mashed potatoes, steamed broccolli.
Tuesday-Stuffed chicken cutlets ( Part skim Ricotta, spinach, and reduced fat feta, and egg white stuffed) , rice pilaf, green salad.
Wednesday-Homemade chicken meatballs, over angel hair pasta, garlic bread.
Thursday-going out.
Friday- Pizza
Saturday- take out
