What to serve for a nice dinner on a Friday in Lent?
My parents are visiting and will be at my house for dinner tomorrow night. What with it being a Friday during lent I'm a bit limited to what I can cook. My DH doesn't like fish and my mother's not crazy about it. Usually we just have pizza and that solves the problem.
Does anyone have suggestions on something a little fancier for a no-meat or fish dinner?

eggplant parm and pasta spinach and cheese lasagna rollups any pasta really!

Besides pizza or fish, we usually wind up eating pasta on Fridays: Penne alla vodka Gnocchi with pesto & pine nuts Fettucine al fredo Ravioli Eggplant parmagiana

you could do a light pasta primavera with shrimp as an optional add in.
just some nice fresh tomatoes, minced garlic, chopped onion, zucchini and or summer squash cooked down over linguine. separately you could cook up some shrimp in a bit of garlic, olive oil, and maybe a hit of white wine (you could add some to the sauce too)
with a nice salad, some warm bread and a hice bowl or freshly grated parmiggiano you'll be set!

Thanks for all the great ideas. I will do some form of veggie pasta. My dad is deadly allergic to shellfish so shrimp is out :)

we ususally have: pasta of some kind sushi lentil soup, salad and maybe a grilled cheese eggplant parm vegetarian paella

totally not fancy, but seriously yummy!
We call is Pasta Fagioli, but it's definitely not soup, or even soupy at all!
Heat a little olive oil in a saucepot, add as much crushed garlic as you like (I usually do about 4-5 cloves). Cook for a few minutes, then add one can of canellini beans (do not drain) and one can of plain tomoato sauce. Heat through and serve over Ditalini & make sure to sprinkle with parmesan cheese!
It is so good, I cannot even begin to tell you! This is my mom's go to lent recipe!!!

Tilapia, brussel sprouts and cous cous.
MIL made Ravioli lasagna last week which was good.
