Your special meat/pasta dinner dish
I'd like to cook a not your ordinary meet dish and pasta dish for DH on New Years day. It will just be us on new years and want to make something new and different. I'm thinking of making Beef Wellington for the first time....but still looking for other ideas. have no idea about pasta maybe stuffed shells or maybe pesto pasta..any ideas? What do you make that you consider a special not your typical dinner dish?

DH's favorite dish is a copy-cat recipe from a restaurant he used to work in. Basically it's penne ala vodka mixed with sauteed chicken and spinach, topped with mozzarella and baked.
I usually make a pound of penne with vodka sauce as I usually would - any recipe or jarred sauce that you like works, I use Victoria's. Then I saute the chicken and the spinach with olive oil, fresh garlic, salt and pepper. I then mix them all together in a big pot, put it all into a casserole dish and top with shredded mozzarella. Bake until the cheese is completely melted.

prime rib filet mignon wrapped in bacon filet mignon and garlic shrimp
zuppa de pesce with linguine mussels in white wine, crusty bread for dipping

My go to "special occasion" beef is also filet mignon/beef tenderloin. I like Ina Garten's recipe and she has a gorgonzola cream sauce to serve with it that is great (and I am not a big blue cheese person, but it kind of mellows out in the sauce). I also like homemade bournaise sauce with filet mignon.
I saw an episode of The Pioneer Woman the other day and she made "Steak Oscar" for her dad. It was filet mignon steaks sautéed in butter and served with roasted asparagus, sautéed shrimp, and a homemade hollandaise sauce. Definitely rich and indulgent -- a special occasion dish!
For pasta - I have made a seafood lasagna recipe from Cooking Light that was delicious (lasagna made with white sauce and filled with shrimp, scallops, etc.). I also like Giada's butternut squash lasagna recipe (with béchamel and pesto) for something different, but I know my DH is not big on butternut squash, so that may not fly!

roast chicken bone in rib roast fresh pasta with truffle oil, pepper, and parm really decadent mashed potatoes (when I make them "everyday" I use earth balance and soy milk so it's not as rich so I would make them with butter, cream, etc for this) beef bourguignon
