Zucchini Bread Recipe
Looking for a good recipe. I never had Zucchini bread but I am dying to try it.

Love this recipe! I've made it for years.
3 cups flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 3 tsp cinnamon 1 tsp nutmeg 3 eggs 1 cup veg. oil 2 1/4 cup sugar (I do about 50/50 white and brown) 3 tsp vanilla 2 cups grated zucchini 1 cup chopped walnuts 1 cup chocolate chips
Sift together the dry ingredients and stir together. Beat the eggs, oil, sugar, and vanilla in a separate bowl. Squeeze excess water out of the grated zucchini and add the wet mixture. Stir together the wet and dry ingredients until just combined. Toss the nuts and chocolate chips in about a tablespoon of flour and then fold into the batter. Pour into two loaf pans that have been greased and floured. Bake at 325 for 40-60 minutes until a toothpick comes out clean. Cool inpan on wire rack for 20 minutes and then remove from the pan and finish cooling on the rack.

This is mine. I've been using it for years, and it's quick and easy to put together:
2 eggs beaten 2 C sugar 3 tsp vanilla 1 C oil 2 C grated, seeded zucchini (do not pack down) 3 C flour 1 tsp baking powder 1 tsp baking soda 1 TBS cinnamon
Preheat oven to 350.
Mix eggs, sugar, vanilla, oil and zucchini by hand. Add flour, baking powder, baking soda and cinnamon and mix by hand until flour is blended in.
Pour into 2 well-greased loaf pans and bake for 55-60 minutes at 350.
