WEEKLY MENU - 1/30
Share your weekly menus!
Infinitigal - I'm excited to see yours! I've been really intrigued with your menus lately
SAT - mozzarella-stuffed meatballs, garlic bread
SUN - grilled veggie chopped salad with shrimp with agave vinaigrette
MON - tortellini with red sauce, salad
TUES - grilled chicken sliders with BBQ sauce & roasted potato wedges
WED - brie, spinach, caramelized onion & pesto panini, mixed greens salad with shaved parmesan
THURS - broiled tilapia parm., couscous, snap peas
FRI - chef's night off!

Monday: Shephard’s pie
Tuesday: Leftovers from Sunday or Monday
Wednesday: Short ribs of beef and mixed vegetables
Thursday: Baked Salmon with Herb and Pecan Pesto and a side salad
Friday: Sushi Night Out
Saturday: Chicken parm, garlic bread, and green beans.
ETA: Forgot Saturday!

Friday: Linguini with clam sauce (Didn't make it last week)

Well.. first a disclaimer. I am not Greek so this is not an 'authentic' recipe. It's just me trying to replicate a meal I enjoy!
For the souvlaki, I just cube chicken breast and put it in a ziploc bag with Olive Oil, lemon, minced garlic, Greek Seasoning, Salt and pepper. You would use more or less depending on how much you made.. but for 4 cutlets I used the juice of 2.5 lemons, about 10 garlic cloves minced (I looove garlic) and maybe just shy of a half cup of EVOO. You can buy Greek Seasoning in the supermarket.. but if you can't find it or don't feel like getting it.. it's basically just dried oregano, dried mint and dried parsley. I think there may also be some hints of cinnamon and nutmeg. The oregano, mint and parsley are most up front though. Let that marinate for 30 - 60 minutes. Once it's good and soaked - I coat them and thread on wooden skewers and grill - or just broil them in the oven without the skewers until they are cooked through (maybe 10 minutes).
For the sauce.. I used a large container of 0% Fage (about 2 cups). You can use any plain Greek yogurt. I sliced a cucumber in half lengthwise and scooped out the seeds and tossed them. You can grate the cucumber - but I chose to chunk it up and throw it in the mini prep processor. You should have at least a half cup of cucumber. I do not peel the cucumbers. Throw the cucumber mess into the yogurt and stir.I add about 2 tablespoons of lemon - go by your own taste. I also added a teaspoon of olive oil and salt to taste. Garnish it with a little cucumber and lemon peel.
I also make a lemon rice pilaf to go with it if you are interested. Just saute a palmful of orzo and a small chopped onion with a Tablespoon of butter in a saucepan. Add 2 cups of chicken stock or broth. Bring to a boil and add 1 cup of white rice (not quick cooking). Bring back to a boil, reduce heat and cover. Simmer on low for 20 minutes. When cooked, add a tablespoon of lemon zest and a teaspoon of lemon. Stir it up. You can also throw in a cup of steamed peas and stir.
I finish the meal with a greek salad made of Romaine, Kalamata Olives, Red Onion, tomato and cucumber with a simple lemon, olive oil and Greek Seasoning dressing.

I decided to start planning our menu monthly. Here is this week. Sorry it's not as fancy as some of the others, but we have a 2 month old and we both work so it's hard to make a long meal.
Sunday: Filet mignon steaks from BJs and garlic mashed potatoes
Monday: Chicken risotto
Tuesday: General Tso Chicken and Rice
Wednesday: Seared Steaks/Sweet Potato Casserole
Thursday: Pasta
Friday: Out to dinner
Saturday: Having friends over and we'll bring something in to eat.

Not sure what day we are having what- Meatloaf, baked potatoes, peas and carrots. I buy mine from an indian grocery store that sells halal meat (muslim equivalent of kosher) It tastes pretty good! I usually buy it in Valley Stream, but DH has bought it in Hicksville in the past.

My grocer sells halal meat. But I dont recall seeing any goat...I guess it's worth asking him though..

My menu this week is pretty boring - I am trying to clear out my pantry and freezer so I only bought a few things this week.
Sunday: Chicken and Dumplings (didn't make last week)
Monday: Baked spaghetti with meat (turkey) sauce
Tuesday: Chicken paillard, rice pliaf, sauteed green beans
Wednesday: Cuban red beans and brown rice, salad
Thursday: Probably leftovers
Friday: Tortellini w/ prosciutto and peas in a cream sauce

Happy February Everyone!!!
Sunday: Did a trial run on Beef Wellington. AMAZING. I did a gruyere/fontina potato gratin and a baby spinach salad with cranberries, pecans, gorgonzola, and raspberry vinaigrette. (Pics below)
Tonight: Filet again! I bought 4 and they were on sale. I am going to pan sear them with red wine, shallots, and garlic. Butternut squash risotto, and sauteed broccoli rabe.
Tuesday: Chicken Cutlets (WW bread crumbs), Burnt brocolli, and brown rice.
Wednesday: Chicken chili and corn cake.
Thursday: Whole Wheat pasta with spinach, shrimp, artichoke hearts, and sundried tomatoes. Whole grain garlic bread.
Friday: Pan Seared diver scallops with lime juice and citrus spices (Mrs Dash). Over Arugala salad with goat cheese.
Saturday: Out for DH's birthday to La Pace :)
Sunday: Superbowl Sunday! I will post my menu in the other thread.
