Spinoff to the Candy Table Threads-What can you make ahead and how far ahead?
DD's 1st Birthday is going to be a lot of DIY decor, food, desserts.
We are aiming to do this party in mid April (4/16 or 4/17 I believe).
We are doing a candy/dessert table and I was wondering if there is anything that I can make and freeze in the next 4 weeks.
We are making- Cake Pops Chocolate Covered Pretzels Cupcakes
I am considering oreo truffles and I will probably look on some food blogs for other ideas.
What things, if any, can be made in advance and frozen so I am not a madwoman the week before?
TIA!

Re: Spinoff to the Candy Table Threads-What can you make ahead and how far ahead?
I asked the same thing on the Food board, but only got one reply.
The cupcakes for sure you could make in advance and freeze. Speak to Ophelia - she froze Luce's bday cake a week or two before the party - for how/when to defrost.
The chocolate stuff I don't think you can freeze. I am making my stuff the week of the party, but I don't know how far in advance.
I'm making: chocolate covered pretzels chocolate covered marshmallows oreo truffles (either as bites or as pops)
As a side, why is Sienna's party in mid April? You can FM me if you want

With DH's schedule, it is easier for him to get up here and then we have Passover so he will be here for the seders

Ahhh, makes sense! Ok so now we definitely won't have a conflict with the party dates!

Re: Spinoff to the Candy Table Threads-What can you make ahead and how far ahead?
I did some research and found that you can probably be safe doing the chocolate covered treats about 2 weeks in advance. I'm going to try to do all of mine the weekend before the party. I will be doing chocolate dipped pretzels rods, oreos and marshmellows. My SIL will be making me 2 batches of cake balls. I am also going to mix a bunch of store bought things too for ease. Like the cupcakes. I'm borrowing a stand from my friend that hold 10 full size cupcakes. So I will use 1 stand and then get a bunch of the minis in blue and white. Stop and Shop ($18.) I am going to get a box of white powdered sugar pop ems ($4.) I will buy premade rice crispy treats (on sale $6 for 48) and will drizzle them with the blue and white chocolate. For candy I did blue gumballs, blue chewy candies, white lifesavers, silver kisses, silver peppermint patties, and light blue and dark blue tootsie pops. I "think" that may be it, but knowing me I'll probably add a few more things as I go.

You can probably make cookie dough and freeze that so all you have to do is just pop them in the oven.
Mich, if you need help with anything just let me know.

Re: Spinoff to the Candy Table Threads-What can you make ahead and how far ahead?
Here's a great and EASY way to make Oreo "truffles"...
Use a food processor to finely grind an entire bag of regular Oreos. Add 1 package of regular Philadelphia cream cheese and pulse until it is incorporated evenly.
Roll the mixture into balls and put in the fridge for at least 2 hours. (You can also freeze them at this point to save you some time as the party gets closer.)
Using good melting chocolate (i.e. Merkens) dip the balls into the chocolate, let the excess drip off and lay on wax paper to set. You can use a stick or a candy dipping tool to do this, but dip the stick in the chocolate first, so that it stays in and don't let them get too warm or they will slide off. This recipe is great for Oreo Cake Pops too!
My family calls these 'crackballs' because they are highly addictive and even better served cold right out of the fridge.
Enjoy!!

Re: Spinoff to the Candy Table Threads-What can you make ahead and how far ahead?
These ladies have some great advice. I would just add that I agree with making the chocolates 1-2 weeks ahead, but for pretzels, I would do not more than 1 week ahead and once they are all set, seal in an air tight container. The chocolate is fine left out for a while, but the pretzels can go stale very easy if not stored properly.

You can make the cake pops on advance, but I wouldn't dip them in the coating until the day before.

Oh, I would love you forever if you could come over! We have three ovens here! This way things can be done and the kitchen will be clean for Passover! Thanks so much Hayley!
