Less complicated dinners
Hi! I'm trying to lose weight. I've been successful before just counting calories and watching portion control. This time I got a Biggest Loser cookbook, but I find that all of the recipes are overly complicated. I don't want to buy 30 ingredients, spend an hour prepping and an hour cooking for something that still needs a side dish!!
What do you normally cook for dinner that is low in calories? I feel like I'm going to wind up eating grilled chicken and veggies every night of the week!!!!! I need some new dinner ideas! As it is, I'm going to eat oatmeal for breakfast every morning and a salad with tuna for lunch every afternoon...
TIA

Re: Less complicated dinners
What about chilis, or and soups loaded with veggies, beans, lean meat/chicken.
Fish
I love turkey, avocado wraps
I make taco salads (chicken, ground lean beef or chicken, lean pulled pork). I make a big bed of lettuce, toms, black beans, olives, alvocado, low fat cheese, light sour cream, jalapenos. Then a few bakes chips. Very filling!
I'll make wheat pasta, but I always load with a large salad or roasted veggies, so fill on them & not the pasta.

Re: Less complicated dinners
I eat a lot of veggies, lean meats (beef, chicken and pork) and whole grains. I also really like squash and sweet potatoes. I try to keep dinners simple.

Chicken Stir fry Shrimp stir fry Whole wheat pasta with seafood salmon with brown rice Healthified Mexican Pasta Skillet Chicken fajitas Crunchy Honey Chicken homemade pizza (with low fat cheese and whole wheat dough) turkey or veggies burgers Jack Daniels pulled chicken (you can find this in the refridgerated section of stop and shop and also at BJs). It's very low in carbs and high in protein. Just heat it up and serve on rolls (or with a grain(

Re: Less complicated dinners
I really like the WW Cook it Quick book. The recipes are pretty simple, not too many ingredients, and since it's WW pretty low in calories. I bought it prior to the change to points plus though so I'm not sure if it'll be hard to find now.

Re: Less complicated dinners
We just made some chili, soup and stew over the weekend, bought a bunch of frozen veggies, and grilled chicken and threw it in some salad...making dinner a little bit easier this week.

Re: Less complicated dinners
The above dinner ideas sound great..the advice I would give you is to add more variety to breakfast and lunch. This is important to help keep that metabolism working well!
Good luck to you on reaching your goals!

Re: Less complicated dinners
I just posted this recipe on the Dining In & Out board. It was AMAZING, and really simple & healthy. I doubled the batch and froze half of it, and the other half we had dinner for a few days.
Quinoa & Black Bean Chili

Re: Less complicated dinners
I make a huge pot of soup for the week's dinner this way there is always something ready. I also freeze some single portions so I can always have variety throughout the week
