Friday - out for Thai with a friend

Saturday - Library Cafe with friends

Sunday - We're going to order in

Monday- Spiced apple chicken sausage & corn on the cob

Tuesday- Chick pea, red onion & broccoli burgers on whole wheat rolls with a side of grilled asparagus

Wednesday - Yom Kippur

Thursday - Shrimp & basil pasta

So I have learned that I can make a meat-centric meal.. and be totally satisfied eating the non-meat sides! Bring on Thanksgiving!

Sunday: Herb Roast Chicken, Stuffing, Green bean and mushroom casserole, brown rice, gravy, roasted carrots, cranberries.

Monday: Butternut squash and bean burritos THANK YOU BUNNY WIFE!

Tuesday: Pan Seared Salmon, Sauteed spinach with garlic, toasted pita

Wednesday: Lentil Soup, Homemade herb bread, cucumber salad

Thursday: Carmelized onion, potato & cheese frittata, Fresh melon salad

Friday: Vegetarian Sloppy Joes w/ Kale chips, end of summer tomatoes

Saturday: Fish & Chips (beer batter fresh fish and double fried french fries), house salad

Sat: Oktoberfest Party! Delish! See Ophelia's menu Chat Icon

Sun: ST mushroom-stroganoff and DH grilled up some mini steaks because he couldn't understand why there was no meat LOL

Mon: ST beef-barley-soup with some crusty bread for the boys

Tues: Beer Braised Chicken thighs and adding a bag of steamed veggies to the leftover mushroom stroganoff

Wed: ST zucchini-lasagna and salad

Fri: Leftovers

Sat: Pizza for the kids and dinner party with a few couples for Dh & I

*Weekly Menu* 9/23

Friday: Homemade pizza night. Topped with fresh mozz, crisp prosciutto and sun-dried tomato.

Saturday: Family dinner. Made a pot of sauce with pork, braised beef shirt ribs and hot and sweet sausage. Made Penne for the adult and spaghetti for the kids. Semolina bread, salad. Olive and cheese plate for appetizer.

Sunday: French onion soup grilled cheese with roasted tomato soup.

Monday: ST Zucchini lasagna.

Tuesday: Crockpot sesame chicken with broccoli and brown rice.

Wednesday: ST Jalapeno popper stuffed chicken, sauteed kale.

Thursday: ST Summer vegetables with sausage and potatoes.

Friday: Sushi night.

Saturday: No clue.

Sun : boneless pork chops with buttered noodles and cucumber salad.
Mon : Baked ziti with sausage
Tues : Marinated Hanger steak, garlic mashed potatoes, tomato and cucumber salad.
Wed : Stovetop grilled veal chop, rice, string beans.
Thurs : Hamburgers, pirogies with carmelized onions, veggie salad
Fri : leftover ziti or sandwiches or pizza.
Sat : Out for Oktoberfest !

Monday: Cheesy Orzo Tomatoes with side of roasted brussel sprouts

Tuesday: Pizza Night!

Wednesday: Baked Sweet & Sour Chicken with Brown Rice and Steamed Green Beans (fresh picked from the farm where we went apple picking!)

Thursday: Marinated Pork Tenderloin with Roasted Potato Wedges and a salad or veggie

Friday: Not sure - May Try Skinny Taste Slow Cooker Pumpkin Turkey Chili

Saturday: Out for an anniversary party

We went apple picking this weekend, so will be making some apple based treats and dishes, too!

Sat - mom ordered in for us :)

Sun - whole roasted chicken, couscous, peas with pancetta

Mon - grilled marinated tri tip, parmesan roasted potatoes, roasted brussels

Tues - chicken & monterey jack quesadillas (with leftover chicken), yellow rice, black beans

Wed - picnic night! mini warm sopressata and provolone sandwiches, salad, grapes and iced pumpkin raisin cookies

Thurs - BBQ chicken drumsticks, salad, buttermilk biscuits

Fri - appetizer night!

Yes. I used the smart taste egg noodles too so they were high in calcium & fiber. We decided they would've been better with a variety of veggies in them so we're using the leftovers tonight, throwing a steamer bag of veggies in it and DH is beer braising some chicken

They were REALLLLLY good. My husband doesn't like Butternut squash, so I just didn't put the squash in his and he loved it. The boys and I did the full experience (I did add a bit extra cumin, some chili powder, extra garlic, a little achiote and some cilantor as topper) and we really enjoyed it! Oh.. and I used cheddar and colby instead of daiya cheese and it was still awesome.

Meatless crumble by Boca. I'm addicted to this stuff. It's basically soy protein, but ti has the texture of ground beef so I use it fairly often and it's always a hit.

Here's the link to the recipe (I found it in the food section of the Sunday paper a couple of weeks ago).

They were good... I definitely recommend seasoning the inside of the tomatoes with salt and pepper and even drizzling a little olive oil on top to amp up the flavor. But with the side of roasted brussel sprouts, it was a good vegetarian meal (I try to have one or two veg meals a week).

They would also be a good side dish with steaks, grilled chicken, etc.

I will make again!

Sorry! I don't know why the link isn't working.

But if you google "Cheesy Orzo Tomatoes" the Relish site link should pop up as one of the first results.

It was really easy to make - Just cut a thin slice off of the top of 4 large tomatoes and scoop out a lot of the pulp (leave enough of a shell that the tomato holds its shape). I drizzled the tomato cavities with olive oil and seasoned with kosher salt and pepper.

Cook 2/3 cup orzo (or ditallini) as per the directions on the box. Drain, reserving 3 TB of cooking water. Stir 4 oz of Boursin (or Allouette, or any other soft garlic herb cheese) into the orzo, along with a couple of TB of chopped fresh parsley 1/4 tsp kosher salt and 1/8 tsp pepper, and the reserved cooking water. Fill the tomato cups with the orzo mixture, sprinkle the tops with grated parmesan, and bake in a 375 degree oven for 25 minutes or until tops start to brown.

I'm so indecisive this week

Sunday- Away for the weekend

Monday- ST chicken taco chili

Tuesday- ST Easiest Broccoli pasta

Wednesday- Leftovers from Monday and Tuesday

Thursday- Quinoa Patties and a side salad. However, we will be going out to a Democrats Abroad Meetup at a German restaurant, so I suspect a Schnitzel may win out Chat Icon .

Friday- Quinoa Patties or Seared Tuna with a side salad

Saturday- ST Coconut Chicken tenders with a salad or Seared Tuna

Sunday- A roast something or other. Trying to decide between Roast Chicken, Roast Duck, or Roast Pork Belly. With veg and a starch of some sort. I might try Yorkshire Puddings.
