***weekly menu 12/2***
Sun: "Lunch With Santa" at Church, I imagine we won't be too hungry at dinner time so probably something light like soup or grilled cheese.
Mon: MaybeBaby's Slow Cooker Ribs , Cole Slaw, & ST garlic-cheddar-biscuits
Tues: ST spinach-lasagna-rolls, ST italian-meatballs and salad
Wed: ST asian-glazed-thighs, Brown 'fried' rice with tons of veggies
Thurs: Leftovers

Friday: ST Chicken with Leeks & Sun-dried Tomatoes in White Wine Sauce (in the crockpot with thighs) over Mashed Potatoes

Sunday - ginger/soy grilled chicken skewers with veggie macaroni salad and quinoa salad from Whole Foods
Monday - grilled flank steak, oven baked fries, steamed broccoli
Tuesday - BLTs with avocado, sweet potato chips
Wednesday - grilled chicken breasts, caprese salad with crostini (never made last week)
Thursday - oven roasted cod, brown rice, sauteed spinach
Friday - penne ala vodka, green salad with lemon vinaigrette
Saturday - out
ETA - baking this week - I made Peppermint Pattie brownies

Sunday: Baked salmon with a bbq sauce/ brown sugar glaze, roasted Brussels sprouts with caramelized onions, brown rice for DH. Roasted chickpeas over spinach salad with shredded cheese for me.
Monday: Tofu & vegetable ravioli, roasted green beans, sauteed mushrooms.
Tuesday: broiled cod marinaded in lemon juice, butter and herbs, baked quinoa stuffed peppers for DH. re fried beans and brown rice quesadillas with roasted broccoli for me.
Wednesday: Baked whole grain Penne with homemade marinara sauce, zucchini and 3 cheese Italian blend.
Thursday: Asian takeout for DH.
Friday: Out to eat

Monday: Ravioli and chicken sausage in homemade tomato sauce
Tuesday: Broiled Porterhouse steaks with a side of sauteed spinach
Wednesday: Whole wheat breaded chicken fingers and baked fries
Thursday: Ground turkey tacos with a side of beans

I went and secured a 2nd job and this is getting REALLY interesting because I’m coaching Rob on dinner prep!
Sunday: I honestly do not remember. I went to work at 3 so.. I don’t know what I might have prepped for them before leaving!
Monday: Worked from 8am – 11pm. I made meatballs and sauce in the morning.. Rob put it with pasta and chick peas and a salad.
Tuesday: Man Pleasin’ Chicken Legs, Brussels Sprouts, Quinoa pilaf
Wednesday: Grilled Steak, Sauteed String Beans, Caesar Salad, sliced potatoes.
Thursday: I’m working until 11pm.. Rob will make seared chicken cutlets with an herb jus, brown rice, Broccoli Florets w/lemon
Friday: I’m working until 11pm.. Rob will have leftovers
Saturday: I’m working until 9:30.. Rob will make scrambled eggs and bacon with toast and fresh fruit.

Would you share your lentil spinach soup?
I wing it now 1 med onion, diced 2 cloves garlic, minced 2-3 ribs of celery chopped 2-3 carrots cut into whatever pieces you want. 1 quartered potato whatever herbs I have around 1-2 bay leaves
I also use whatever sausage/bacon/chorizo I have in the house, but you can skip that if you want.
but I saute the meat in my soup pot til browned, removed. add the veggies and cook until onions are tender/translucent. add back in the meat. add the herbs/bay leaves. add the lentils. add the amount of liquid directed on the bag of lentils (48oz I think) you can use water or stock.
cook down until lentils are tender. fish out potato with about a cup soup. buzz in the blender. return blender contents to pot (it will thicken the soup) add spinach (fresh baby or chopped frozen) adjust for salt and pepper.
grate in tons of parmiggiano.
That's all I got. lol
