I'm perfectly fine eating it as is...but when I want to Jazz it up a bit...

- slice it thin & eat it with thinly a sliced tart apple

- slice it thin & place on crusty french bread with dijon mustard and black forrest ham

- (you can do this with either a wheel or a wedge) top it with raspberry preserves, wrap in puff pastery and bake at 375 til golden brown

-I'll make cream of mushroom soup and add brie to melt in (rind removed)...delic!

-I'll use it as one of many cheeses in a grown up version of mac and cheese (usually along with gruyuer & fontina)

-taking a wheel of brie, cut off the top rind (leaving bottom and sides in tact) - place on tin foil and put on the grill til the middle is melted - then top with your favorite fruit preserves (usually do 1/2 raspberry and 1/2 apricot)

I make an appetizer with it all the time:

Buy the premade mini phyllo dough shells from the freezer section (I get Athens brand). Put a bit of raspberry jam at bottom of each shell; place a small cube of brie on top of the jam; top with a pecan half. Bake at 425 degrees for 5-7 minutes, until cheese is melted.

They are like easy, individual baked brie!
