Need Chicken Soup Recipe
This is the recipe I use:
Ingredients 2 1/2 pounds bony chicken pieces 2 celery ribs with leaves, quartered 2 medium carrots, quartered 2 medium onions, quartered 1 leek, dark tops only 1 parsnip, quartered 1 bay leaf 3 sprigs of thyme 3 sprigs of parsley 4 quarts cold water

Instructions 1.Combine the chicken, vegetables and herbs in a large stockpot. Pour in enough water to just cover the chicken completely. Heat the water to just under a boil over medium-high heat. Reduce the heat to a very low simmer, so that 1 or 2 bubbles break the surface of the broth about once a minute. Skim any fat and scum from the surface with a ladle, large spoon, or skimmer. (To prevent losing a lot of stock when skimming, put the skimmed liquid into a degreasing cup, and return any useable broth back to the pot.) Cook for about 1 hour or until the chicken is cooked through but not dry. 2.Remove the chicken from the pot, but continue to simmer the broth. Cool the chicken for about 10 minutes. Cut the chicken meat from the bone, and reserve for a chicken salad, soup, or other recipe. Strain into a non-reactive container, like another pot, a large bowl, or plastic quart or pint containers.

We like it better with celery, carrots, onion, GARLIC, a whole chicken and some herbs but instead of water using chicken stock (low sodium).

I change it up all the time. Soup is so friggin' versatile.
The basics.. make a stock - put a chicken, some broken carrots, a few broken celery stalks, a quartered onion or 2 (I leave the skin on because I think it deepens the color of the broth) and a few cloves of garlic in a pot. Add water or chicken stock that you have made/reserved previously. Add seasonings. I like salt, pepper, fresh thyme, fresh rosemary and poultry seasoning.You can also use store bought chicken broth. Bring it to a boil and reduce heat.. let it simmer for a few hours.. stirring every now and again. Turn off heat and strain the whole thing into another pot so that the veggies and chicken are in the strainer. Return the broth to the pot and add some diced carrots, some chunks of potato, some sliced celery and some chopped onion.. or whatever veggies float your boat. Take the chicken that has been cooling in the strainer and pull it apart and put it back in the soup. Bring up to a boil and then reduce heat.. simmer until veggies are softened.
I sometimes take a bit cream and whisk in some flour and add to the pot for a creamier soup. Sometimes I'll squeeze a little lemon in the broth or add apple cider or orange juice for a little acidic punch. I have also adopted PW's tip and put a pinch of tumeric in when making my stock.. I like it a lot.
I make noodles or rice separately so they don't eat all the broth. Then I put the rice (or noodles) in a bowl and add some broth/chicken.

Need Chicken Soup Recipe
i just made chicken stock 2 nights ago! when we roast chicken i put the carcasses in the freezer, and i also had a bag of veggie bits and pieces on the freezer - it had parts of onions, leeks, fennel, peppers, stems of herbs, basically everything we cook with - even half a lemon. i added in some garlic, carrots, peppercorns, and bay leaf. i use kosher chicken, so i don't add salt, but you might want to leave out the salt anyway so you can control it based on what you end up using the stock with.
for chicken soup, i brown the heck out of some onions/leeks (it gives the stock better color/flavor), add in some celery, carrots, parsnips - basically whatever veg you want, cut into bite sized chunks (but not too small because it will cook too fast and get mushy). poach a couple chicken breasts in the broth. when they are done, cut them into chunks and put back in the soup. add in fresh herbs - parsley, tarragon, dill. if you want pasta, cook it separately and add it in when serving, otherwise the leftovers will get mushy.

i'd guess that putting in just a pinch of it in a whole pot of stock would add mostly color.

Yep. Mostly it gives that nice yellow color. But there is a tiny hint of flavor as well!
