Irish Soda Bread recipe

Looking for a version that is not dry! Im not Irish....but love to bake!

Help from some lassies would be great!

Irish Soda Bread recipe

I have one that I got from the Irish lunch lady at work:

4 cups all purpose flour
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 cup butter
2 cups golden raisins
1 1/2 cups buttermilk
1 egg
1 teaspoon baking soda
1 tablespoon caraway seeds


Mix flour, sugar, salt and baking powder together. Add butter and mix with knife until it resembles course corn meal. Stir in raisins. Combine buttermilk, egg and baking soda. Stir until flour until dough forms. Bake in greased loaf pans for approximately 45 minutes at 350.

Irish Soda Bread Ingredients
• 4 cups flour
• 1 cup sugar
• 1 tsp baking soda
• 2 tsp baking powder
• 1 tsp salt
• 1 egg
• 1 1/2 cup buttermilk
• 1 1/4 cup raisins
• 2 tsp melted butter

Instruction
• Optional pre-step: Soak raisins in water or OJ overnight for a few hours. Make sure you drain them before mixing into batter— reserve some of the leftover liquid.
• Combine everything in a big bowl & mix with your hands.
• Transfer to pre-greased 9” round baking pan—cast iron is a great option as well. • Bake at 350° for 50-60 minutes.
• When done, wrap in a dish towel and cool.

• Notes: You can also do this recipe in a loaf pan- it will make 1 big loaf or two smaller ones.
• For extra moistness, add 1 TB of the leftover raisin liquid to mix.
• If top starts to brown too much, cover bread with tin foil.

I would love if someone has a tried and true sweet irish soda bread recipe. I may try this one:

Irish Soda Bread Cake
Yield: 2 loaves
Prep Time: 20 minutes I Bake Time: 30-35 minutes

Ingredients:
4 cups flour
3/4 teaspoon salt
3 teaspoon baking powder
1 teaspoon baking soda
1/2 cup granulated sugar
1 tsp ground coriander
1/4 cup butter (cold and diced into small pieces)
1 egg
1 1/2 cup buttermilk
1/2 cup raisins
Preheat your oven to 350 degrees.

Combine all of the dry ingredients and the raisins mixing until fully incorporated, then stir in the butter.

In a separate bowl beat the egg slightly and then pour in the buttermilk. Add the dry ingredients and mix until fully incorporated.

Turn the dough mixture onto a floured surface and knead slightly until the dough becomes smooth. Be careful not to over knead the dough so you don't get a hard dough.


Divide the dough into two equal halves and place into two greased round baking dishes. Press down on the dough softly and cut a cross into the top of the loaves.

Bake the breads until golden brown.

Many of these recipes are very similar, but I will add mine too. It comes out very moist and I always get compliments on it.

4c flour sifted
1t baking soda
1t baking powder
1t salt
1c sugar
4oz softened butter
2 eggs
1 1/4c buttermilk
1c raisins soaked in warm water.
Melted butter

Combine dry ingredients. Cut in softened butter. Add eggs, buttermilk and raisins in order listed, mixing after each addition.

Bake in a greased cast iron pan at 335 degrees for 1 hour. Brush with melted butter 30 minutes into cook time. (If it isn't golden brown and "done" looking after 1 hour give it a bit more time). Cool about 10 minutes in pan, then turn out of pan and cool another 10 minutes. Wrap in aluminum foil.

*Strain raisins and dry with paper towel prior to adding.
* Caraway seeds will make your sodabread taste like rye bread (IMO).

I usually make the Land O' Lakes version because it's so easy and it's tasty.

This year I'm also trying a Bon Appetit version:

ngredients
Nonstick vegetable oil spray
3 cups all purpose flour
3 cups whole wheat flour
½ cup (packed) brown sugar
2 teaspoonS baking soda
¼ cup (½ stick) chilled margarine or butter, cut into ½-inch cubes
2 cups buttermilk
Optional : 2 tsp butter, melted
1 Tbsp. oatmeal (not Irish oatmeal)
Directions

Preheat oven to 425°F.

Spray heavy baking sheet with nonstick spray. Whisk both flours, sugar, and baking soda in medium bowl to blend. Add butter and cut in until the butter is reduced to pea-size pieces. TIP: Grating the butter makes this task must easier.

Add buttermilk; stir until shaggy dough forms.

Turn dough out onto lightly floured work surface. Knead until dough comes together, about 10 turns.

Shape dough into 9-inch round (the round should be about 1 inch high). Place dough on prepared baking sheet. Cut large X, 1/2 inch deep, in top of dough, almost all the way to the edges of the round.

Bake bread in center of oven until deep brown and bottom sounds hollow when firmly tapped (a bamboo skewer inserted into the center of the bread should emerge clean without any stickiness or moistness), about 55-60 minutes. Transfer bread to rack and cool completely.

NOTES: I used my food processor to blend the ingredients, then turned it out onto a floured surface to knead. It takes some elbow grease to work the dough, but it does comes together.

Be sure to bake the bread to a dark golden color. The ends might turn out to be baked, but the center can be a little raw in the middle. The first time, this happened to me but I simply returned it to the oven and it was fine.


I think I'm going to try a couple of others too.. I have a party tomorrow so it can be a taste test!

I ended up using this and baked it in my Dutch Oven (no top) and added turbinado (hard) sugar to the top. We like it sweet. Came out perfect- thanks! Just curious- how do you store it to keep it freshest?

I made Barefoot Contessa's recipe this weekend, first time, and it was pretty delicious!

Ingredients

4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

Directions

Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.

Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.

With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.

Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.

Cool on a baking rack. Serve warm or at room temperature.

Glad you liked it! I just keep it in the aluminum foil on the counter. It doesn't last very long in my house. I've made 3 already since last Sunday! Chat Icon
