~*~Weekly Menu 4/1~*~

I didn't see a thread, so I figured I'd start one--hope I'm not just missing it!

My menu is kinda boring this week...oh well!

Monday: DH and my dad ordered in Chinese for us to celebration my new job as a professor!

Tuesday: Easter leftovers

Wednesday: Taco bake with chipotle salsa & avocado slices

Thursday: Bacon mac 'n cheese

Friday: Teaching DH how to make ST Cheeseburger Casserole

Mon - roasted eggplant slices topped with homemade sauce and cheese/sauteed spinach/salad

Tue - roasted veggies (asparagus, zucchini, carrots) with barley and a lemon something sauce

Wed - soy 'bacon' BLTs with fries

Thu - eta: duh, I'll be seeing a show on B'way that night so...a slice of pizza?

Fri - not sure

Sat - going to a baptism...it'll be a heavy lunch so probably a light dinner

Sun - going to be out all day at a guitar trade show, then possibly a Wrestlemania party so...junk food, most likely

Sunday: Easter Dinner at Mom's

Monday: Scrambled eggs with cheese and rye toast

Tuesday: Chicken Meatball Tortellini Soup

Wednesday: Crispy Skinned Salmon, Creamed Spinach and Broccoli Pasta Side

Thursday: Grilled Flank Steak and Grilled Shrimp, Roasted Broccoli, House Salad with greek dressing and Grilled Garlic Ciabatta

Friday: Cheese Manicotti and salad

Saturday: ??
