Roasted potatoes

I use a good amount of olive oil...but I think the key is to toss them a few times throughout cooking.

This

I also soak my potatoes after the are sliced in icy cold water and dry with a dishtowel after. Don't ask my friend taught me years ago and it helps them get a crispy outside.

How often do you toss them? Every 10 minutes? Usually when I go to turn them they are totally stuck even though I use plenty of olive oil.

Yes..I usually cook for 40 minutes or so and I want to say I toss at least every 10 minutes. Also, halfway through I may add more olive oil depending on how they look. what temp are you cooking them on?

Thank you. Maybe I'm waiting too long. I usually cook them at around 400 but I have something else that needs to be in at the same time so I'll probably do both at 375.

I put the cut up potatoes in a zip lock bag, drizzle the olive oil in the bag then add seasoning. I then zip it closed and smush it with my hands to get all the potatoes coated. Doing it this way uses less oil but coats all the potatoes And I never have to toss while they're roasting.

Re: Roasted potatoes

I line the baking sheet with tin foil, and then coat the foil with non-stick spray.

Then I add the potatoes (I do toss them with oil, of course, but I try to limit the oil if it's just for us during a weekday to cut down on calories).

Doing it like that, I don't really have an issue with sticking, even if I don't toss them often (I think the tossing promotes even browning, but I don't always do it).

Also chiming in that I agree with the water trick (soaking in cold water first). I don't always have time for that step, but when I do, it makes for really crispy oven roasted potatoes or oven fries.
