Re: Easter Menu

Ham has always been our Easter meal. I think one year we did filet mignon, which was a nice change.

Re: Easter Menu

Easter menu usually includes homemade manicotti, ham, lamb, shrimp oreganata and apps such as stuffed mushrooms, potatoes, salad. And of course tons of Italian pastries.

Re: Easter Menu

We always have a spiral ham, lasagna, meatballs, and sausage for the main meal. Another Easter food tradition for us is noodle pie (app), rice pie (dessert), pizza rustica (Italian meat pie), and Easter bread.

Re: Easter Menu

Spiral ham and roasted potatoes, lasagna, fried calamari and shrimp, roasted lamb chops, risotto.

I love making the Easter bread with painted eggs and sprinkles. I use a lemon zest for flavor.

It's usually lasagna or manicotti with meatballs, sausage, and braciole. Last year my mom made a spiral ham and lasagna but it was a lot for her.

We have homemade cassata for dessert. It's my great-grandmother's recipe.

Re: Easter Menu

I have 35 people and this is the basic menu I've used for the past 7 years:

Appetizers -

Antipasto platter
Cheese platter
spinach dip in breadbowl
shrimp cocktail or cold marinated shrimp
baked clams
1 or two other hot appetizers tbd
rose sangria

Dinner -

Marinated London broil, sliced thin
Roasted turkey breast (gravy, cranberry sauce)
Baked glazed ham
Rolls (for people to have on side or make sandwiches with above meats)
cheeses, pickles, condiments for sandwiches
Lasagna or stuffed shells
Twice-baked potatoes
Carrot soufflé
Corn casserole
Some kind of green salad (I've done Iavarone's Gigi salad, Ceasar salad, etc.)
In the past I also had quiches, but it was too much food!

Dessert -

Everybody contributes so we usually have a big spread including fruit, cookies/brownies, cheesecake, my mom makes an Easter bunny cake decorated with candy, cannoli platter, assorted Easter candy, etc. and coffee!
